German Apple Almond Cake – an easy German Cake recipe 

You can never have enough recipe ideas for the apple season and new recipes for apple cakes and today I have a particularly delicious German apple cake recipe for you.

German Apple Almond cake with marzipan – super moist and juicy and perfect on a cozy fall day along with a cup of coffee! Grandma’s German apple marzipan cake is quick and easy to prepare with just a few ingredients. 

Just like my Pear Cake with Marzipan and my German Hazelnut Marzipan Cake this is another great recipe for all marzipan fans and apple cake lovers. The marzipan not only gives the cake a fine almond taste but also makes the batter particularly juicy.

With that subtle almondy flavor of marzipan, this quick apple cake recipe is just perfect for the transition between autumn and Christmas.

The combination of tart apples and sweet almond marzipan batter is simply brilliant! I love that the cake keeps for a long time and I think it tastes even better the next day.

Ingredients for apple marzipan cake

You just need a few ingredients for making apple almond pie with marzipan. You can find the exact amounts in the recipe card below and print them out.

  • Apple, depending on size 2 – 3 pieces
  • marzipan  – storebought or homemade marzipan
  • butter at room temperature
  • sugar
  • Salt
  • Vanilla Sugar – I use the Dr. Oetker ones and find them in the baking aisle of any bigger grocery store but you can skip and use 2 tsp vanilla essence
  • eggs – whole eggs preferably from organic farmers
  • flour – if you want, you can also replace 25 g flour with cornstarch
  • baking powder

How to make German Almond Apple Cake

The preparation of apple almond cake is quick and easy.

Start by grating the marzipan with a box grater or cut it into small cubes. It’s easiest to chill the marzipan to make it easier to grate.

Then add softened butter, grated marzipan, sugar,  vanilla sugar or vanilla essence, a big pinch of salt, and a few drops of almond essence to a medium bowl and whip for a good 3-5 minutes until white and fluffy. Beat in the eggs one after another.

For a smooth dough that doesn’t curdle, make sure that the eggs and butter are at room temperature.

Now stir together flour and baking powder in a small bowl and stir this mixture in – the batter is ready. I just let the bowl stand and prepare the apples as the last step so they don’t turn brown.

If you want to cut the apples beforehand, just toss them with a little lemon juice.

When I bake the cake in the springform pan (9 inches) I only lightly grease the edge of the pan. You can line the bottom of the springform pan with baking paper.

Fill the batter into the pan, smooth it out and place the apple slices in a circle into the dough. Now sprinkle with the slivered almonds and 2 tablespoons of sugar.

Put the cake in the 180 C / 375 hot preheated oven and bake for about 40 -45 minutes on the middle rack and cover with baking paper or aluminum foil after about 30 minutes.

It tastes so delicious and slightly lukewarm. When the cake is cool, I take it out of the tin, put it on a wire rack, and dust it with some icing sugar.

Which apples are best for making apple cake?

Suitable apple varieties for baking apple pie, apple cake, or apple muffins are firm varieties with sour flesh. When preparing desserts, a sour apple is always a great contrast.

Great kinds are sweet and sour Jonagold, Granny Smith or Cox Orange. Idared apples are also very suitable for baking sponge cakes.

When is my cake ready?

Since the exact baking time for batter always depends on the oven, go for the first toothpick test after 35-40 minutes.

My cake was ready after exactly 45 minutes and I used a 23 cm / 9 inch springform pan. With a bigger springform pan I would check at 35 minutes.

When no raw batter sticks to the wooden skewer, the cake is ready. A few moist crumbs are fine.

The baking time is not long, but to keep the cake nice and light in color, you can cover it with aluminum foil about halfway through the baking time.

How can I grate marzipan?

I do this with a box grater, and put the marzipan in the freezer for 10 minutes or let it chill for a little longer in the fridge.

This works pretty well and the small grated pieces then thaw in minutes so that you get your marzipan batter nice and smooth.
