Here’s a High Protein Beet oatmeal bake recipe just in time for Valentine’s Day!

Beetroot awesomeness injected into oatmeal. How genius. This high protein beet oatmeal bake has a nice earthy sweetness, and if you’ve got a sweet tooth, you can always top it up with a tiny bit of homemade chocolate hazelnut spread or nut butter. 

After you guys have loved my beetroot hummus, and my Moroccan beet salad I felt like adding another amazing pretty pink recipe that is just perfect for Valentine’s Day! Just look at the vibrant color.

This healthy breakfast oatmeal bake is high in protein thanks to added protein powder and is truly comforting. It’s such a delicious, oh-so-satisfying breakfast and with that pink color it is a great way to start the day on a colorful note.

I absolutely adore beet everything from beetroot salad to beet brownies and this beetroot oatmeal bake is just perfect in the cooler months.

 It’s a really easy way to mix up your regular breakfast routine.

Health Benefits

Did you know that Beets can lower blood pressure significantly? They also contain blood-vessel-friendly nitric oxide which helps to relax and dilate your blood vessels. It also vastly improves blood flow and lowers blood pressure.

While we could just dye our oatmeal bake with beet powder, I prefer to use whole beets here as I like to bake a whole batch and use them for different recipes.

And on to the oatmeal – I mean, I really cannot stress the benefits of starting your day with oatmeal – be it in overnight oats or porridge!

I also add a pinch of Cinnamon, which is not just a flavor enhancer but also a natural blood sugar regulator. Did you know as little as 1/2 tsp cinnamon daily can have positive effects on blood sugar levels, digestion, immunity, and more?

You can enjoy this beet oatmeal bake as is but I added a Greek yogurt drizzle on top. You could also serve this drizzled with your favorite nut butter.

Now oatmeal tends to be a little plain and has a reputation for looking like baby food and being boring tasting. This simple recipe for beet oatmeal bake is anything but.

The ingredient list is short and it’s fast to make, super tasty, and a delight to look at.

How to make Beet Oatmeal Bake:

In a large bowl, combine the dry ingredients, so rolled oats, xylitol, chia, cinnamon, protein powder, baking powder, and salt.

In a blender puree the peeled cooked or roasted beet with milk, coconut oil, egg, and vanilla.

Add that pink milk mixture to the dry oat mixture, and stir well. 

Pour the oatmeal mixture into the prepared pan, sprinkle with cocoa nibs or dairy-free chocolate chips and bake for 30 to 35 minutes or until the oatmeal is set and golden brown.

Ingredients

  • 2 cups old-fashioned oats
  • 1/3 cup packed xylitol
  • 1 teaspoon baking powder
  • 2 scoops protein powder
  • 1 tbsps chia seeds optional
  • 1/2 tsp cinnamon
  • 1/4 teaspoon salt
  • 1 beetroot
  • 1 1/2 cups milk
  • 2 tablespoons coconut oil
  • 1 egg
  • 1 tbsp vanilla extract
  • 1/3 cup cocoa nibs or dairy free chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with some nonstick cooking spray and set aside.
  2. In a large bowl, combine the oats, chia seeds, cinnamon, xylitol, protein powder, baking powder, and salt.

  3. In a blender puree beet with milk, coconut oil, egg and vanilla.
  4. Add the milk mixture to oat mixture; stir well.
  5. Pour the oatmeal mixture into the prepared pan, sprinkle with cocoa nibs or dairyfree chocolate chips and bake for 30 to 35 minutes or until the oatmeal is set and golden
