Healthy Apple Muffins Thermomix

These healthy apple muffins are prepared in the Thermomix in minutes and taste just like apple cake! The perfect healthy after-school snack or sweet treat for the kids lunch boxes that is also glutenfree.
As a German girl, I am in love with all things apple cake and these Thermomix apple muffins taste just like my granny’s German Apple Cake! She used to make it as an afternoon-school snack for me all the time.
But other than granny’s cake these easy apple muffins are glutenfree made with ground almonds and also sugar-free. So these easy apple muffins are a pretty healthy sweet treat perfect to serve with a cup of tea.
There are so many more options for making these delicious thermomix apple muffins even more delicious. You can add some cinnamon for apple cinnamon muffins or chai spice for apple chai muffins or you can make apple and pear muffins instead by using one apple and one pear in the recipe.
Or, make it a cake by spreading the batter into a 20cm round springform tin and decorating the apple slices on top.
You could even add some chopped walnuts or almonds or sprinkle in some raisins! Adding raisins will obviously add some sugar and make these a little less healthy but still perfect for a breakfast bite.
If you wanted, you could add a cinnamon mixed with brown sugar for easy apple crumble muffins.
Ingredients
- chopped apples – Jonagold, Honeycrisp, Braeburn or granny smith. Check out my article on the best apples for baking We don’t want grated apples here, just chopped
- to keep these sugar-free I added erythritol but you can use xylitol instead or just use regular sugar
- ground almonds or almond meal NOT almond flour
- baking powder gives the muffin batter the perfect rise
- Greek yogurt make these an extra moist muffin – you can use applesauce instead if you want
- eggs – we separate them and whip the whites
- as fat I used neutral-tasting rapeseed oil
- lemon juice and zest bring out the apple flavor some more
How to make Apple Muffins in the Thermomix:
- Preheat the oven to 180°C / 160°C Fan . Gas Mark 4. Line a 12-hole muffin tin with cupcake liners / paper cases or grease with some butter and dust with flour. Set aside.
- Slice the apples or apples and pears into thin pieces and drizzle with the lemon juice. Set aside.
- Insert the Butterfly whisk into the Thermomix bowl and add the egg whites.
- Whip for 2-5 mins/speed 3.5 with the MC off. Keep a watchful eye on them so as not to overwhip. When firm peaks form, the egg white has reached its fullest volume and should not be whipped any longer.
- In a small bowl quickly combine baking powder with the ground almonds.
- Remove egg whites. In the mixing bowl add egg yolk, yogurt, lemon juice, lemon zest and oil as well as erythritol or xylitol and combine 20 Sec. / Speed 5. Scrape down using a spatula, add almonds and combine again 10 Sec. / Speed 5.
- Finally fold in the whipped egg whites and the apple pieces using a spatula. Leave a few apple chunks for topping the muffins.
- Divide the batter between the molds using an ice cream scoop and place a few remaining apple pieces on top of the muffins
- Bake the muffins in the preheated oven on the middle rack for about 20 minutes until golden brown.
Tips for whisking egg whites in the Thermomix
- Ensure that the bowl is sparkling clean and free of all grease. Lemon juice and vinegar are a good way to get rid of any residue left behind from cooking with butter and oils. Also check that the butterfly attachment is impeccably clean and dry.
- Use the Butterfly on Speed 3.5.
- Use fresh egg whites as they will whip up quickly and become more stable than old ones.
- It’s easier to separate the yolk from the white whilst the eggs are cold. Once separated, leave them to come to room temperature ready for whipping.

- 200 g ground almonds - 1 3/4 cups
- 60 g Erythritol or Xylitol or just use regular sugar - 1/3 cup
- 2 tsp baking powder
- 1 pinch salt
- 3 eggs
- 150 g Greek yogurt or applesauce - heaping 1/2 cup
- 2 tbsp neutral tasting oil
- 1 tbsp lemon juice + some extra for drizzling the apples
- 1 tsp fresh lemon zest
- 2 apples
