Beltane (in Germany, celebrated as Walpurgisnacht) is one of my favorite holidays. It honors fertility, abundance, sex, and the growth of everything beautiful on Earth. Plus, there are delicious honey fritters to be had! SO I AM IN! 

What is Beltane and how is it celebrated?

May 1 is celebrated as the day of Beltane in the Northern Hemisphere. The word Beltane is Celtic and means bright fire. In pagan traditions, it represents the symbolic marriage of the God and Goddess and their eternal embrace. Think of this holiday as a celebration that honors the divine balance in the union of masculine and feminine. 

The festival of Beltane persisted until the 1950s in the British Isles and also some parts of mainland Europe, like Germany, Austria, and some of the Slavic countries. In many of those countries, it is still celebrated today – more as a cultural event and usually involves giant bonfires and dancing.

You can still enjoy the Beltane celebration in parts of Ireland, Germany (Walpurgisnacht), the Scottish Borders, Scandinavia and North America ( it was brought over by immigrants).

Why celebrate Beltane? 

In my home, we celebrate it each year with a bonfire, a big meal, and delicious little honey fritters! I recommend it to anyone who finds themselves longing to connect in a deeper way to seasonal change. Celebrating these ancient holy days and the changing seasons we can connect to something older than us that is still very much a part of us and our heritage.

Whether you are celebrating Beltane, May Day, or Walpurgis Night, I think we should all do something wildly hedonistic tonight!

A rose petal bath, a good meal washed down with some vino, fire building in the garden, and let’s not forget HONEY CAKES!

These easy honey fritters are traditionally made the night before Beltane! They are perfectly crisp on the outside and soft and fluffy on the inside! Those are fun even if you want to keep things tame and stay fully-clothed during your Beltane celebrations. But let’s face it, eating honey-glazed fritters is a delightfully messy business so you might want to take your fancy clothes off and change into something comfy!

What are Beltane Honey Cakes ( Honey Fritters)? 

Spiced Fried Honey Cakes are typical fare for Beltane celebrations! The tradition of making honey fritter cakes the night before May 1st dates back to the Celtic belief that the veil between this world and the Otherworld was especially thin during those hours, and that it was necessary to appease fairies and other creatures not of this world.  Fried dough in general, and honey fritters in particular, are highly mollifying. 

These easy cinnamon and nutmeg spiced honey fritters, also known as Beltane Honey Cakes, were left in the garden to please Faery visitors. They are similar to Greek Honey Fritters but made without yeast and covered with delicious spiced honey!

A delicious sweet fritters recipe for Beltane that kids and adults love! I mean, sweet fried dough is simply the best, right ??!!! 

Tips for making Beltane Honey Fritters: 

  • We need runny honey for this recipe as we use it for dipping.
  • Use neutral-tasting vegetable oil for the best results.
  • If you do a lot of deep-frying, I recommend investing in a deep-frying thermometer (or a candy thermometer) to gauge the heat of your oil.
  • As for the temperature of the oil, for doughnuts of all sorts, and also for this honey fritter recipe, I would aim at a temperature between 360 and 375 degrees F! This will give you the best results.
  • If you plan to leave an offering to the fairies, double the recipe to keep some for your family.

Ingredients

  • ½ cup sweet white wine Riesling or Moscato
  • 2 tablespoons sugar white sugar - use stevia for refined sugar free
  • 1 egg
  • 1 cup honey runny - we need it for dipping
  • 2/3 cup flour
  • 1/4 teaspoon cinnamon
  • 1/8 tsp ground cloves
  • 1 pinch cardamom optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • neutral oil for frying

Instructions

  1. Beat the wine and the egg in a medium bowl until smooth. Combine the flour, cinnamon, cloves, cardamom, salt, and sugar in a small bowl. 

    Stir into the egg mixture. Let the batter stand for 30 minutes. In the meantime, combine the honey and the nutmeg in a small bowl.

  2. Heat ½-inch of the oil in a frying pan until hot, but not smoking (350F). Drop the batter into the oil 1 tablespoon at a time; fry until golden brown. Drain on paper towels. Dip into the honey.
