Christmas is my favorite time of the year. Breakfast is my favorite meal of the day. So Christmas Morning Breakfast is kind of a HUGE thing for me.
As a matter of fact, I started having Christmas morning breakfast about a week ago – which is when I whipped up these Vegan Hazelnut Cinnamon Overnight Oats.
For me, every morning felt like Christmas morning ever since. Yes, I had these vegan overnight oats every day. That’s how incredible they are! You gotta try them!

We all know that as the day continues, those treats will pop up everywhere. Being full and satisfied helps to resist the things we don’t really want to eat.
Oats are rich in a number of nutrients like fiber, carbohydrates, plant-based protein, and B vitamins. This makes a bowl of cinnamon overnight oats a powerful meal for gut, heart, and brain health.
Also, these vegan overnight oats contain good amounts of iron which is especially important when eating a vegan diet.

Apart from the obvious toppings- hazelnuts and cinnamon- I wanted to add something special to this vegan overnight oats recipe. Because Christmas should be treat time, right?
Ever since I discovered that you can make vegan sour cream with cashew nuts , I am a bit obsessed with homemade nut creams.
As a sweet topping for my morning oats, I always keep a small glass container full of cinnamon hazelnut cream in the fridge. It’s seriously the best porridge topping ever!
These vegan cinnamon overnight oats paired with the creamy, slightly sweet hazelnut cream – Christmas heaven! You could hand me a bowl of ice cream and I would still go for the oats.
Tips for making the best vegan overnight oats:
- Make sure to stick to a 2:1 ratio of liquid to oats when making vegan overnight oats to achieve a perfect spoonable, porridge-like consistency.
- Add a big pinch of salt to your liquid oat mixture before refrigerating it. It will add so much flavor to your oats and will definitely not make them taste savory!
- Old-fashioned rolled oats are the best choice when it comes to making overnight oats. While instant oats often dissolve into mush rolled oats give you that creamy, smooth texture with just the right amount of chew.
- Give your vegan overnight oats one good final stir after taking them out of the fridge.
Variations on this Vegan Overnight Oats recipe:
- You can add chopped nuts or fruit to these cinnamon overnight oats. Make sure to reserve mix-ins like nuts, seeds, fresh fruit, granola, and coconut flakes for the morning. Chia seeds and chopped dried fruit can be adding at night, as chia seeds do need time to absorb liquid and dried fruit will need some time to plump up.
- You can use ground flax seeds instead of chia seeds if you prefer that.
How to make Vegan Hazelnut Cream:
The recipe starts with raw organic hazelnuts.
I like to toast my hazelnuts on a tray in the oven at 150 C, or 300 F for 10 minutes. Let cool down for 2 minutes, then place in a clean tea towel and rub to remove some of the skins.
Transfer the nuts to a glass bowl and cover them with water. Chill in the fridge overnight. Like pistachios and almonds, hazelnuts are long-soak nuts and need at least 8 hours to soften.
Then, I rinse them and puree them with the same amount of liquid, 1 tsp of stevia, some salt, nut milk, and cinnamon.
For 1 small container of hazelnut cream, I use 1 cup hazelnuts and 1 cup of cashew or hazelnut milk. It is important to add a big pinch of salt along with the cinnamon and stevia to get more depth of flavor.
Blend until you have a smooth cream and transfer to a sealable container.
The hazelnut cream lasts in the fridge for at least a week. It will firm up with time, so stir in some water or nut milk so make smoother.
I always make a big triple batch as part of my meal prep. That way I can have a bowl of Vegan Hazelnut Cinnamon Oats every morning!
No need to double the recipe for the hazelnut cream. It already makes a big batch that will get you through a week of oats.

Vegan Hazelnut Cinnamon Overnight Oats
These vegan hazelnut cinnamon overnight oats are the perfect healthy make-ahead breakfast for the holidays! Easy to make, gluten-free & sugar-free!
Ingredients
Oats
- 1 cup oats 120 g
- 2 tbsp chia seeds 15 g
- 1 big pinch of salt
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 1/2 tbsp stevia or truvia
- 2 cups almond milk or hazelnut milk, or coconut
Hazelnut Cream
- 1 cup whole roasted hazelnuts soaked in water overnight
- 1 tsp cinnamon
- 1 cup nut milk
- 1 tsp stevia or truvia
- 1 big pinch salt
Toppings
- 2 tbsp ground hazelnuts
- 2 tbsp roasted hazelnuts
- cinnamon
Instructions

Mix all ingredients for the overnight oats and place them in an airtight container to soak overnight.

Make the hazelnut cream. Drain and rinse the hazelnuts and place in a high-speed mixer (I use my Vitamix) and blend with the rest of the ingredients until very smooth. If too thick, add some more milk. The consistency should be a bit thinner than sour cream. Refrigerate overnight.

Stir your overnight oats and stir in 2 tbsp of hazelnut cream, if you want your oats a bit creamier. Divide between 2 bowls and decorate with roasted hazelnuts, cinnamon, ground hazelnuts, hazelnut cream and whatever else you want. Enjoy!
