As a lover of all things coconut, I LOVE giving the classic coconut macaroon a twist. After making chocolate macaroons, and Dulce De Leche Coconut Macaroons I am now adding another secret ingredient to the mix – Homemade Salted Caramel Auce and wow, what a difference it makes!

The chewy texture combined with the deep caramel flavor and a touch of dark chocolate makes these macaroons are extra moist and totally irresistible. Plus, they’re easier to make than you’d think, with no complicated steps or fancy ingredients involved!

The Secret to Perfect Macaroons

When making these caramel coconut macaroons, it’s important to get a good meringue base. Beating the egg whites just until stiff peaks form helps create that light and fluffy texture, giving the macaroons their classic chewy yet airy structure.

Be careful not to overmix the meringue with the caramel and coconut. You want to fold the ingredients gently to keep the mixture light and airy – overmixing will deflate the meringue and leave you with flat, dense macaroons.

While these macaroons are divine on their own, I always recommend dipping the bottoms in melted dark chocolate for that extra layer of indulgence. The chocolate really complements the coconut and butter caramel.

Caramel Coconut Macaroons with Chocolate

Ingredients

  • 2 egg whites
  • 120 g caramel sauce ½ cup
  • 120 g sweetened condensed milk ½ cup
  • 2 tsp vanilla extract
  • 200 g sweetened shredded coconut 2 ¼ cups
  • 2 tbso flour
  • 170 g semi-sweet chocolate 6 oz finely chopped
  • 1 teaspoon coconut oil

Instructions

  1. Fit a stand mixer with the whisk attachment, and ensure the bowl is clean and dry. Beat the egg whites on low speed, gradually increasing to high, until stiff peaks form.

  2. In a separate bowl, whisk together the salted caramel sauce, sweetened condensed milk, vanilla extract, and flour until smooth.

  3. Combine mixtures: Gently fold the caramel mixture into the stiff egg whites using a rubber spatula. Be careful not to deflate the egg whites. Once combined, fold in the shredded coconut.

  4. Use a 2-ounce cookie scoop to portion out the batter onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

  5. Preheat the oven to 160°C (325°F) and bake the macaroons for 12 – 14 minutes, or until they’re lightly golden on the top and sound hollow in the middle when tapped.

  6. In a microwave-safe bowl, combine the chopped chocolate and coconut oil. Microwave in 30-second intervals, stirring between each until fully melted

  7. Dip the bottom of each macaroon into the melted chocolate, then place them back on the parchment paper to set. Drizzle additional chocolate over the top if desired.

  8. Allow the chocolate to firm completely before serving. Store in an airtight container at room temperature.
