This German Cheesecake Casserole with Quark is a healthy low carb alternative to cheesecake

This easy German cheesecake casserole is healthy, low carb, high in protein, and super quick and easy to make. All you need are a few simple ingredients. 

 Quark is a great low fat and high protein snack and can be enjoyed as is but you can also bake quark and make wonderful desserts out of it ( hello German cheesecake).  But today we are keeping things healthy and make a simple low carb cheesecake casserole! This quark casserole tastes just like cheesecake! If you are in the mood for a easy dessert that can be rated as “healthy” and is super high in protein, you won’t go wrong with this German cheesecake casserole.

This is a nice fluffy summer dessert, which makes fresh berries the star of the show. Of course, you could make this  German cheesecake casserole any time of the year, if you like a nice breakfast or dessert.

Ingredients 

  • quark (or use skyr or strained Greek yogurt)
  • eggs 
  • vanilla protein powder ( if yours is already sweetened you might not need more sweetener, if using plain add more vanilla to taste)
  • vanilla 
  • optional: more sweetener of choice to taste 
  • red currants or another berry of choice 

What is Quark and can I substitute it?

 Quark is a German dairy product that tastes mild and creamy and is often compared to products like yogurt and cottage cheese.  It is mild and neither sweet nor sour in taste,  a bit like cottage cheese, but with the texture of a thick, Greek yogurt You can buy it at many grocery stores or make your own. 

As a substitute for quark, you can use skyr or strained Greek yogurt. 

Make it in the microwave 

You can also make this in the microwave. A big mug takes about 3 minutes.

Tips:

    • If you are pressed for time, skip separating the eggs and just mix everything together.
    • The recipe makes 1 big portion or 2 smaller. It can easily be doubled.
    • The cheesecake casserole is done when it has risen like a souffle and still has a bit of a wobble in the middle. 
    • You can use skyr or strained Greek yogurt instead of quark if you can’t find it.

Low Carb German Cheesecake Casserole with Red Currants

Ingredients

  • 2 eggs
  • 250 g quark
  • 1/4 cup protein powder if unsweetened, use the optional erythritol or other sweetener to sweeten
  • 1 tsp vanilla
  • 1/2 cup red currants

Optional

  • 1/4 cup erythritol or to taste

Instructions

  1. Preheat the oven to 356 F / 180C. Separate the eggs and whisk egg whites until soft peaks form.

  2. Whisk quark and egg yolks with vanilla and protein powder. Add sweetener to taste and fold in the egg whites.

  3. Pour mix in a casserole dish and sprinkle with berries. Bake for 30 - 35 minutes until it rises like a soufflee (it will collapse again once cooling) and still has a slight wobble in the middle.

  4. Ich würde sagen, dass das Creek Yoghurt fast wie unser Quark ist. Für meinen Käsekuchen mixe ich manchmal Creek Yoghurt und einen Philadelphia Cheese zusammen.
