Strawberry Mascarpone Dessert – An easy German summer dessert with strawberries that you will love. 

A lovely summer strawberry mascarpone dessert that’s super quick, simple and easy. Ready in less than 15 minutes, so even more time to enjoy

This easy strawberry dessert in a glass combines mascarpone, quark or ricotta and whipped heavy cream with real vanilla – all layered with pureed fresh strawberries and cookie crumbs!

Ingredients for Strawberry Mascarpone Dessert

  • heavy cream 
  • Quark ( or use ricotta, or Greek yogurt that you’ve drained in a sieve lined with paper towels)
  • Mascarpone 
  • vanilla
  • sugar or sweetener 
  • strawberries
  • lemon juice
  • cookie crumbs 

You can easily double the recipe if you are feeding a crowd. 

What flavor has mascarpone cheese? 

Mascarpone cheese has a mildly sweet, buttery almost nutty flavor. It is less tangy than comparable cheeses like ricotta and American cream cheese.

How to Make this easy German Mascarpone Dessert with Strawberries:

  • Whip together the mascarpone, quark, lemon zest, 1 tsp lemon juice, sugar, and the seeds of one vanilla bean. Don’t toss away the scraped-out vanilla bean. Instead, stick it in a jar full of sugar to get vanilla sugar, for instance.
  • Whip the heavy cream until stiff! Don’t overdo it or it will turn to butter! Fold the whipped cream into the mascarpone quark mixture. 
  • Puree the strawberries with icing sugar, stevia, or sweetener to taste.
  • Place the mascarpone-cream mixture into a piping bag and pipe into individual dessert cups. Pour the strawberry sauce over this mixture and sprinkle cookie crumbs on top.
  • Sprinkle with cookie crumbs and place in the fridge for at least two hours or until ready to serve.

How to replace quark?

I used low-fat quark in this recipe. If you cannot find it, you could replace it with ricotta or thick Greek yogurt (like FAGE) or a mixture of the two. If using Greek yogurt, drain in a sieve.

Can I use other fruit for this mascarpone dessert?

The original is made with fresh strawberries but frozen and defrosted strawberries would work when fresh ones are unavailable. Of course other berries like raspberries or blueberries or a mixture of berries would be delicious as well. 

Tips: 

  • This recipe is awesome for using up those strawberries that are not looking that perfect anymore.
  • You can use lime zest and juice instead of lemon.
  • Skip the rum if you want
  • Decorate with fresh mint leaves. If you want, add some fresh mint when pureeing the strawberries.

Easy Strawberry Mascarpone Dessert

Ingredients

  • 250 g mascarpone - 1 cup
  • 250 g quark strained Greek Yogurt or Ricotta
  • 2-3 tbsp sugar
  • 1 vanilla bean scraped out
  • 1/4 tsp lemon zest
  • 200 ml whipping cream - 1 cup
  • 1 pinch of salt

Strawberry Puree

  • 3 cups strawberries
  • 1 tsp sugar or sweetener
  • 1 tsp lemon juice

for assembling

  • 3/4 cup cookie crumbs Graham Crackers or Amaretti cookies

Instructions

  1. Whip together the mascarpone, quark, icing sugar. lemon zest and the seeds of the vanilla bean adding a pinch of salt to enhance sweetness. Tip: Don’t throw away the empty vanilla bean, stick the scraped out pod in a jar full of sugar to get vanilla sugar.

  2. Whip the heavy cream until stiff (don't overwhip or you will end up with butter) and fold it into the mascarpone mixture using a hand held whisk. Do this gently.

  3. Puree the strawberries with lemon juice, icing sugar or sweetener to taste. Place the mascarpone-cream mixture into a pipng bag. Sprnkle some cookie crumbs onto the bottom of your jars. Pipe some mascarpone whipped cream on top. Pour some strawberry sauce over this mixture. Sprinkle with more cookie crumbs and repeat. Now, place in the fridge for at least two hours or until ready to serve.

  4. Decorate with fresh strawberries
