These cute Soft Gingerbread Cookies are not only adorable but also extremely delicious! My bunny shaped German gingerbread cookies include a generous amount of honey, which gives them a pale golden color and a mildly sweet flavor.

Making soft Gingerbread Cookies is a must during the holiday season and these cute Honey Bunny Gingerbread Cookies are a family favourite!
As the name suggests, we are not using molasses but honey to sweeten and soften the dough! This is how we make gingerbread (or as we call it, Lebkuchen “life cake” ) in Germany, where molasses is pretty much non-existent.

 

Why this is the only soft gingerbread cookie recipe you’ll ever need:

I love this soft gingerbread cookie recipe for its simplicity! The whole process is incredibly stress- and fuss-free.
What makes our German gingerbread cookies so wonderfully soft is a perfected ratio of ground almonds, butter, flour, brown sugar, and honey.

 

To make these soft gingerbread cookies taste like little Christmas miracles, we use a bold blend of spices. Not only the usual cinnamon, cloves, and nutmeg. No, also black pepper, coriander, and allspice.

 

My favorite part is when I heat the honey and brown sugar in a little pot and measure out the spices while I let the sugar fully dissolve! The aromas wafting through the kitchen are simply amazing!

For my Honey Bunny Gingerbread Cookies, we want a rich gingerbread cookie dough packed with warm Christmas spices!

 

If you look at the list of spices, you’ll notice that I have some of them listed as optional! For a less spicy German honey gingerbread cookie, leave those out.

 

This is slightly unusual but it is what my Grandma used to do and I promise that you’ll love the slight kick these two ingredients add to your soft gingerbread cookies!

Decorate your German Gingerbread Cookies however you want – think gingerbread men or little Christmas bunnies!

The decoration for these Honey Gingerbread Cookies is super easy! We simply mix two different powdered sugar -based icings.

 

We add some ground cinnamon to one of the glazes to get a nice brown colour. The brown glaze is the bunny “fur” while the white glaze is used to pipe some details like ears, eyes and a little tail onto the bunnies.

 

I used this Piping Pen to do so and found it really easy to work with!  You can also use a piping bag or a little freezer bag to do so! Simply cut off the corner tip, trying to keep the hole as small as possible.

Soft Gingerbread Cookies - German Honey Gingerbread

Ingredients

  • 1 Bunny Cookie Cutter
  • 75 butter
  • 125 honey
  • 50 brown sugar
  • eggwhite
  • 200 flour
  • 100 ground almonds
  • tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2  tsp allspice ground
  • 1/2  tsp coriander optional
  • 1/4  tsp freshly grated nutmeg
  • tsp ground ginger
  • 1/2  tsp finely ground pepper
  • pinch of salt
  • tsp baking powder

For the brown glaze

  • 125 powdered sugar
  • 1-2  tbsp lemon juice or rum or spiced whiskey
  • tsp cinnamon

For the white glaze

  • 100 powdered sugar
  • 1-2 tbsp lemon juice
  • sugar pearls for decoration

Instructions

  1. In a small pot, heat butter and honey until the sugar is dissolved. Stir well and let cool.
  2. Once cooled, mix in the egg white using a hand mixer or the stand mixer with the whisk attachment

  3. Switch to the paddle. Mix flour, spices, salt, and baking powder and add to the honey mixture. Mix to combine, cover the bowl with cling film and put in the fridge for 2 h to firm up a bit.
  4. Preheat the oven to 200 Celsius / 400 F.
  5. Roll out the dough to 6 mm and cut out cookies. Put the bunnies on a prepared baking sheet and let bake for 5 minutes. Let cool completely.
  6. Mix the ingredients for the 2 glazes. Glaze cooled gingerbread bunnies with the brown glaze. Let the glaze dry and decorate them with the white glaze, using a piping bag with a small hole or a Piping Pen. Use sprinkles or edible pearls for the eyes and nose!

Recipe Notes

Store the bunnies in cookie tins.

Adding an apple slice or a piece of bead helps to keep them soft. Do not forget to replace the apple slice regularly.

    oh, wie süß! Die kann man ja gar nicht essen, so niedlich sehen die aus. Besonders das Bild mit der Trommel ist der Hammer! Mit dem Apfel in der Dose muss ich auch mal testen. Habe ich jetzt schon öfter gehört.
