An easy German Dessert recipe with quark and egg liqueur! 

Looking for a simple yet impressive dessert for Easter or Mother’s Day? You found it! This traditional German Quark dessert is like your favorite yogurt parfait – but, well, more brunch than breakfast material. Because it is a bit naughty! This is an easy dessert that is very popular around Easter in Germany. 

The cream is made with quark (a German cheese curd), Greek Yogurt, and mascarpone – it is simply divine! Now on to the naughty part! This delicate, not too sweet mascarpone cream is layered with homemade egg liqueur (advocaat) to create a rich yet refreshing parfait that is perfect for spring 

What is Quark and what does it taste like?

For those of you who have not heard of quark, its . Quark is a German dairy product that tastes mild and creamy and is often likened to products like yogurt and cottage cheese.  It is mild, and neither sweet nor sour,  a bit like cottage cheese, but with the texture of a thick, Greek yogurt You can buy it at many grocery stores or make your own.

On to the next typical German ingredient – Egg Liqueur! 

I prefer to make the egg liqueur for this dessert myself using this recipe but one can also buy it! German egg liqueur can be purchased in most liquor stores – you find it near the cream liqueurs and it’s often called advocaat which is the Dutch name for it.

I like to serve this layered mascarpone quark dessert with fresh blueberries, but raspberries or strawberries also go great here!

Simple individual yogurt parfaits like this are also always a great way to use any leftover cookies like Amarettini. Super tasty and damn pretty to look at!

Low calorie / lighter version:

If you want to reduce the amount of calories, you have several options! Instead of mascarpone, you can simply mix 125 g low-fat quark and 125 g cream cheese. Then add some carbonated mineral water when whipping, but only very little (best to start with a tablespoon). That makes the cream more fluffy.

You can use a liquid sweetener of your choice, like stevia, erythritol, or monk’s fruit. 

What is a good substitute for Quark in this German dessert recipe?

If you can’t find quark you can substitute  it with equal amounts of one of these options:
  • Plain Greek yogurt
  •  Mascarpone cheese – but it will be a LOT richer.
  • 2 parts ricotta cheese with 1 part sour cream.

Tips:

  • Sometimes I like to add a few drops of vanilla to my quark cream!
  • Low-calorie version: Skip Mascarpone and use half a cup each of quark and cream cheese – then add some carbonated water when whipping, but only very little (best to dose with a tablespoon).

Ingredients

  • 250 ml whipping cream 1 cup
  • 1 1/4 cup natural yogurt or Greek yogurt without sugar / 300 g
  • 1 cup mascarpone / 250 g
  • 2 cups quark 500 g
  • 1 tbsp lemon juice
  • 1/2 cup sugar or some stevia
  • 1 1 /2 cup homemade egg liqueur or storebought advocaat

Instructions

  1. Whip the cream into soft peaks. This works best when the cream is still really cold. Don't overdo it so that your cream doesn't turn into butter on you! Whisk the quark, yogurt, lemon juice, and mascarpone well along with the sugar or sweetener, it is best to use a hand mixer so that the sugar dissolves really well. Now carefully fold in the whipped cream using a handheld whisk. Chill, or layer immediately.

  2. For assemly, layer egg liqueur and the quark mixture alternately in dessert glasses (looks nicest in a glass bowl or in individual dessert glasses). You can also sprinkle with grated chocolate or blueberries and edible flowes.

Make ahead instructions:

Can be prepared the evening before and then stored in the refrigerator.

If want to add a crunchy element to this you also add a layer of crushed cookies like amaretti, they will be nice and soft by the time you serve.
