Autumn Spiced Apple Bread with Rosemary & Sunflower Seeds

A moist quick apple bread spiced with cinnamon, nutmeg, rosemary and pepper and loaded with fresh apples and healthy sunflower seeds. So easy, you don’t even need a mixer, and your house will smell like heaven!

Apple Bread is something I love any time of the year, but this version with sunflower seeds and rosemary is especially perfect for fall. This quick apple bread spiced with cinnamon, nutmeg, rosemary and black pepper incredibly warm and cozy feel to it.

The texture is light, fluffy and moist – you won’t be able to eat one slice only!

What I love about this Apple Bread, is that it is both sweet and savoury and therefore the PERFECT brunch treat.  Serve it straight out of the oven with cheese or salted butter for a savory apple bread, or with cream cheese and honey or nut butter for a sweet treat!

The recipe for this Apple Bread could not be easier! You basically mix the dry and the wet ingredients and combine them. Done in 5 minutes. No creaming butter and sugar, no whipping of egg whites! The apple loaf cake will still be super fluffy and as moist as can be!

Which apples shall I use for making Apple Bread? 

What we want for this Apple Bread, are juicy pockets of fruit in a moist fluffy batter. Therefore, I recommend you use a more robust variety of apple so that it does not turn to mush when baking. My favorite apples to use for this quick bread, are Granny Smith or Fuji Apples.

How to make Apple Bread with Rosemary and Sunflower Seeds: 

Preheat the oven to 350 F, or 175 C. Line a loaf pan with parchment paper. Toast the sunflower seeds in a pan without oil and let cook. Peel, core and chop the apple.

Mix flour, salt, baking powder, sugar and spices in a bowl. In a separate bowl, whisk buttermilk, eggs and oil. Add the wet mix to the dry ingredients and stir with a spatula until a wet, sticky batter forms.
Little clumps are no problem. Make sure not to overmix the batter.

As the last addition, add sunflower seeds and apple chunks, stir quickly, then spread batter in your lined loaf pan.

Bake the Apple Bread for 45-50 minutes until the sides start to brown. Test with a wooden skewer for doneness. Insert it into the middle of the cake and check, if there is any wet batter sticking to it. If not, your Apple Bread is done!

Tips for success: 

  • Make sure not to overmix the batter. Little clumps of flour will disappear while baking.
  • Serve this fall-inspired Apple Bread fresh out of the oven with some salted butter.
  • Try this Quick Bread with pears instead of apples and serve it with some brie or camembert for a fall-inspired brunch or breakfast.
  • For a vegan Apple Bread, use coconut milk instead of buttermilk and use flax eggs instead of chicken eggs.

Ingredients

  • 2 cups flour

  2. Och menno! Das Rezept hat sich mehr als verführerisch angehört, doch leider war das Brot bei mir selbst nach über 1,5 Stunden im Ofen noch halb "roh". Was könnte ich falsch gemacht haben?

    Wow, ein köstliches Rezept! Da ich Eier im Brot nicht mag, habe ich diese durch 2 EL Apfelessig und 3 TL Natron ersetzt. Vielen Dank für die tolle Idee 🙂
