These healthy Rhubarb Strawberry Cheesecake Porridge Oatmeal Bowls are perfect for those of you who could start every single day with a slice of cheesecake but also want to be healthy and full until lunch!
Rhubarb season is my favorite! Between my Rhubarb Crumble Pie, Rhubarb Scones and my Rhubarb Chutney I find it super hard to decide what to make first. These rhubarb strawberry porridge bowls are perfect to get my daily dose of rhubarb in while it’s in season while I make up my mind which dessert to make first. These cheesecake oatmeal bowls are healthy, filling and taste like desserts! Try them.
Ingredients for Rhubarb Strawberry Cheesecake Oatmeal Bowls
Wondering how to make oatmeal taste amazing? Try this winning combination of ingredients:
- Rolled Oats
- Strawberries
- Rhubarb
- Salt – super important
- Milk or Unsweetened Almond Milk or Oat Milk
- Greek Yogurt and Cream Cheese – you can use low fat
- Stevia
- Vanilla
- Graham Crackers or Biscoff Cookie Crackers
Rhubarb Strawberry Cheesecake oatmeal bowls are easy peasy to put together and absolutely DELISH. Just perfect for a spring morning. The oats come out super thick, creamy, and a little tangy just like your favorite Rhubarb Strawberry Cheesecake but all without the sugar! The stewed rhubarb and strawberries give the porridge a pretty pastel pink hue. I mix yogurt and cream cheese into our strawberry rhubarb oatmeal for extra creaminess and that cheesecake flavor. Any yogurt in your fridge will do! If you want to make these oatmeal bowls vegan, use super-probiotic coconut yogurt.
Right in the end, we stir in some more fresh strawberries for a bit of fresh strawberry flavor in every single spoon! You’ll be sad when your bowl is empty.
This creamy Rhubarb Strawberry Cheesecake Porridge is an oatmeal bowl recipe that is cheap and quick to make and full of all the nutrients you need to start the day off right. - creamy porridge comes from stirring constantly
- if you don’t have fresh rhubarb and strawberries, just use frozen fruit
- use any sweetener you like, think stevia, monk fruit sweetener or erythritol
- for a high-protein version, stir in skyr instead of cream cheese or add some vanilla protein powder
- rhubarb and raspberry is another amazing combination here

Rhubarb Strawberry Cheesecake Oatmeal Bowls
This quick and easy Strawberry Cheesecake Oatmeal Bowl with Cheesecake Swirl is a healthy, low fat and gluten free breakfast that tastes like a slice of Strawberry Rhubarb Cheesecake.
Ingredients
- ½ cup oatmeal 40g
- 1 ½ cup milk plant-based, your favorite - 355 ml
- 1 big pinch of salt
- 1 stalk rhubarb sliced
- 2 cups strawberries divided , chopped
- 2 tbsps sweetener I used Stevia
- 1 tsp vanilla
- 1 - 2 tbsps cream cheese
- ¼ cup Geek yogurt
Instructions

Add milk and salt to a pot and add oats. Let heat up until it bubbles, Add the rhubarb slices and let boil up, reduce heat and let simmer, stirring, until the rhubarb is soft and breaking apart. Add one cup of strawberries and stevia or other sweetener and stir. Let cook for another minute or two. Stir in vanilla. Turn off the heat. Stir in cream cheese and Greek yogurt and stir until dissolved. Add the rest of the strawberries.

Decorate with fresh strawberries, crushed cookie crumbs and a spiral of Greek yogurt. I like to add some cheesecake flavor drops to my cheesecake swirl.
