I love making mascarpone desserts and quark desserts when I need a quick and easy no-bake dessert for a dinner party. This Gingerbread Spice Mascarpone Cream Dessert is a popular German Christmas Dessert in Germany. In its traditional version, it uses ground-up cinnamon star cookies and, by all means, if you happen to have those sitting on your cookie platter, go for it. Otherwise, take hazelnut cookies, lotus biscoff cookies, or any cinnamon cookie. They have great flavor too.
The cream features mascarpone, yogurt, and quark. You can use ricotta or replace it with finely blended cottage cheese.
The sugar and cookies are pulverized in your thermomix, then we just add all other ingredients, so the mascarpone, quark, yogurt, gingerbread spice, orange juice and Cointreau. Ready! So quick and simple. It literally takes 3 minutes.
Can I make this without a thermomix?
Yes, you can! For making this German Christmas Dessert without a thermomix, finely grind your biscoff cookies. Then, using a hand mixer, mix the mascarpone and quark with yogurt and add the sugar, salt, vanilla, and cookie powder. Mix until everything is smooth and add the orange juice and orange liqueur (Cointreau). Fill the mascarpone cream into glasses and decorate with a little cocoa powder and/or a Christmas cookie before serving.
You can also double the recipe. Desserts in the glass are always very popular, I recommend the small mason jars, as the size of the glasses is ideal.
This delicious Christmas dessert is super quick and easy, and the best thing is that you can prepare it a day in advance. The small mason jar glasses are ideal for storage and you can close them so the cream does not take on any weird fridge flavors.
What is a good substitute for Quark in this German thermomix dessert recipe?
If you can’t find quark you can substitute it with equal amounts of one of these options:
- Plain Greek yogurt.
- Mascarpone cheese – but it will be a LOT richer.
- 2 parts ricotta cheese with 1 part sour cream.

Christmas Mascarpone Cream Thermomix Dessert

Ingredients
- 3 tbsp sugar
- 7 biscoff cookies
- 1 cup mascarpone
- 1 cup yogurt
- 1 cup quark or substitution see notes
- 1 tbsp vanilla extract
- 1/2 tsp gingerbread spice
- 1 tbsp orange liqueur
- 2 tbsp orange juice
Instructions

Add sugar into the container of your thermomix and pulverize for 10 seconds on setting 10. Add cookies and grind for 5 seconds on setting 5. Add all other ingredients and let mix for 20 seconds on setting 4, Fill into glasses, decorate with cocoa powder and/or cookies. Serve chilled.
