Happy New Year, everyone! Are you all enjoying your New Year’s Resolutions so far? I have not even had any time to focus on mine as we had to move from Calgary to Grande Prairie on the 2nd of January.
And spending 10 hours on the road kinda messes with your daily step goals. Your menu options are also limited during a day on the road.
It’s pretty much the family size pack of Lindor on the backseat or giving in to fast food.
But hey, wait – this time I was prepared. Yep, next to the Lindor collection box was our cooler packed with healthy food choices. Some sugar-free black bean brownies and a big old Tupperware with overnight oats.
And not just any overnight oats. guys, I found my new favorite! A vegan overnight oats extravaganza scented with a hint of cardamom and rosewater and topped with homemade pistachio cream and pomegranate arils!
Perfect for all those of you who want to give clean eating a try this year but still want to start the day on a sweet note!
Dear clean eaters, knowing how to make a mean bowl of overnight oats will be a game changer for your mornings!
I make a big old batch every Sunday evening and that will get me through the work week. In the morning, all I need to do is top my oats with fresh fruit and nuts and voila!
This vegan overnight oats recipe is my new fave as it combines my love for all things pistachio with my obsession with morning oats!

Why you will love this easy healthy recipe for overnight oats with pistachios, rosewater and pomegranate seeds:
- A pinch of cardamom and a small splash of rosewater turn simple oatmeal into a feast for all senses!
- These vegan oats look super elaborate and fancy but the truth is that you can prep every single component in advance – down to removing the pomegranate seeds.
- The combination of chopped pistachios, pistachio cream, rosewater, and pomegranate seeds is nothing short of divine! The perfect healthy breakfast for Valentine’s Day!
How to make the best vegan overnight oats:
- Make sure to stick to a 2:1 ratio of liquid to rolled oats when making vegan overnight oats to achieve a perfect spoonable, porridge-like consistency.
- Add a big pinch of salt to your liquid oat mixture before refrigerating your overnight oats. It will add so much flavor to your oats and will definitely not make them taste savory!
- Old-fashioned rolled oats are the best choice when it comes to making overnight oats. Instant oats often dissolve into mush and steel cut oats stay too hard, but rolled oats give you that creamy, smooth texture with just the right amount of chew.
- Give your vegan overnight oats that good final stir after taking them out of the fridge.
- Your oats will get thicker from day to day. If you like them more liquid, stir in some more milk or pistachio cream before eating.
How to make Vegan Pistachio Cream:
The vegan overnight oats recipe starts with raw organic pistachios. You can sometimes get them shelled these days but I was not that lucky.
Move over avocado hand, pistachio thumb is the new hipster injury. I hope you won’t find out what it is.
I like to toast my pistachios on a tray in the oven at 150 C, or 300 F for 8 minutes. Let them cool down for 2 minutes.
Now, transfer the pistachio nuts to a glass bowl and cover them with water. Chill in the fridge overnight. Like almonds or hazelnuts, pistachios are long-soak nuts and need at least 8 hours to soften.
Then, I rinse the pistachios and puree them with the same amount of almond milk or coconut milk, 1 tsp of stevia, some salt, and maybe some vanilla extract.
Want your pistachio cream to be extra pretty? Remove the purple shells before blending. This is easier once the pistachios are soaked.
For 1 small container of vegan pistachio cream, I use 1 cup unshelled pistachios and 1 cup of cashew, almond, or coconut milk. It is important to add a big pinch of salt along with the stevia to get more depth of flavor.
Blend until you have a smooth pastel green cream and transfer to a sealable container.
The vegan pistachio cream lasts in the fridge for at least a week. It will firm up with time, so stir in some water or nut milk so make it smoother.
Variations on this Healthy Vegan Overnight Oats recipe:
- You can add any chopped nuts or fruit you like to these cinnamon overnight oats. Make sure to reserve mix-ins like nuts, seeds, fresh fruit, granola, and coconut flakes for the morning.
- Chia seeds and chopped dried fruit can be adding at night, as chia seeds do need time to absorb liquid and dried fruit will need some time to plump up.
- You can use ground flax seeds instead of chia seeds if you prefer that.
- No pomegranates available? Apricots, strawberries or raspberries taste amazing in this oatmeal recipe.
How to remove pomegranate seeds without turning your kitchen into a murder scene:
We’ve all had unfortunate pomegranate incidents and I have to admit that my first instinct is still to pull a Dexter Morgan on my kitchen counter and wrap everything in cling film. Including myself.
But the truth is, that you can remove the seeds of a pomegranate fruit quite easily:
- Roll the pomegranate to loosen the seeds.
- Score around the middle and gently tear it open into halves.
- Hold each half over a bowl with the seeds facing down and tap the skin with a wooden spoon. It helps to squeeze a little to release the seeds.
- Alternatively, you can simply score 4 lines from top to bottom to quarter the pomegranate.
- Submerge the pomegranate in a bowl of water and pull apart the quarters, releasing the pomegranate arils with your hands.
- The white pith will float on top and the seeds will sink. Discard the pith, then drain the seeds.

Vegan Overnight Oats with Pistachios, Rosewater & Pomegranate
These healthy vegan overnight oats with pistachios, rosewater, and pomegranate arils are the perfect romantic breakfast for Valentine's Day!
Ingredients
For the overnight oats
- 120 g rolled oats
- 2 tbsp chia seeds
- 1/4 tsp ground cardamom
- 1/4 tsp salt
- 1/4 tsp rosewater
- 500 ml coconut milk or cashew milk
- 1 1/2 tsp Stevia
Pistachio Cream
- 1 cup raw pistachios shelled
- 1 cup coconut milk
- 1 tsp stevia
Other toppings
- 2-4 tbsp chopped pistachios
- 1/2 pomegranate seeds removed
Instructions

Stir all ingredients for the overnight oats together and chill in a sealable container for 8h or overnight.

Make the pistachio cream. Drain and rinse the pistachios and place in a high-speed mixer (I use my Vitamix) and blend with the rest of the ingredients until very smooth. If too thick, add some more milk. The consistency should be a bit thinner than sour cream. Refrigerate overnight.

The next morning, stir your overnight oats and stir in 2 tbsp of pistachio cream, if you want your oats a bit creamier. Divide the oats between 2 bowls and decorate with chopped pistachios, dollops of pistachio cream, pomegranate seeds and whatever else you want. Enjoy!
