These Brown Butter Macadamia Blondies are Blondie Perfection. They have a strong caramel taste thanks to the browned butter and the edges are wonderfully crispy and give way to a chewy interior ! Macadamia Nuts and chopped white chocolate on top are the perfect additions to these sinful blondies.

Being part of a family that travels a lot, we had to add a no souvenir clause to the book of unwritten family rules. The only exception being made for edible gifts. Because food presents are the best presents.

The other day my mother in law got back from Hawaii with a huge bag of macadamia nuts wondering wether I could maybe use some for my baking. Oh yes I can! And I know exactly where they will end up. Ever since I made these Strawberry Macadamia Blondies I am convinced that the best place for these buttery and mild nuts is on top of a fudgey blondie! Along with some white chocolate!

I am not a fan of cakey blondies or brownies. I want mine intense!! All fudgey and chewy and dense! Just like these beauties. These Macadamia Blondies have a strong butterscotchy flavour as we add browned butter, brown sugar and a generous amount of vanilla! I really hope you give these Brown Butter Macadamia Blondies a shot! They seriously changed the way I think of blondies! No need for big amounts of melted white chocolate, which in my opinion often results in rather sickingly sweet blondies. A little chopped white chocolate or chocolate chips is enough to get the job done.

With the rest of the macadamias I’ll have to make my husband’s beloved Strawberry Macadamia Blondies! I love how unpretentious he is when it comes to food. Strawberries and white chocolate are not for girls only I guess. Also, these cookies here have been on my mind for quite some time now. I can’t wait!!! 

Brown Butter Macadamia Blondies

Ingredients

For a small 8x8 batch

  • 115 g butter melted and browned
  • 3/4 - 1 cup dark brown sugar 200 to 220g
  • 1 large egg
  • 2 tsp vanilla
  • 1 pich sea salt I sprinkle some fleur de sel on top as well
  • 1 cup all-purpose flour 125 g
  • 1 cup roasted macadamia nuts
  • 3/4 cups chopped white chocolate

Instructions

  1. Butter an 8×8 pan
  2. Mix melted and browned butter with brown sugar and beat a good 5 minutes until smooth and fluffy. Beat in egg and then vanilla.
  3. Add a pinch of salt and stir in flour. Mix in the chopped macadamias and the white chocolate.
  4. Pour into prepared pan. Bake at 350°F 20-25 minutes, or until set in the middle. I always err on the side of caution with baking times — if you are not sure whether they are done, better take them out early. Nobody ever complained about a gooey-middle blondie. Cool the blondies on a rack before cutting them.
