Ingredients 

  • quark (or use skyr or strained Greek yogurt)
  • eggs 
  • vanilla protein powder ( if yours is already sweetened you might not need more sweetener, if using plain add more vanilla to taste)
  • vanilla 
  • optional: more sweetener of choice to taste 
  • red currants or another berry of choice

Tips:

  • If you are pressed for time, skip separating the eggs and just mix everything together.
  • The recipe makes 1 big portion or 2 smaller. It can easily be doubled.
  • The cheesecake casserole is done when it has risen like a souffle and still has a bit of a wobble in the middle. 
  • You can use skyr or strained Greek yogurt instead of quark if you can’t find it. 
  • If you don’t have red currants available, make this with blueberries instead! Fresh or frozen – both works.

Low Carb German Cheesecake Casserole with Red Currants

This Low Carb German Cheesecake Casserole with Red Currants is healthy, low in calories and packed with protein! The perfect guilt-free healthy treat or sweet breakfast

Ingredients

  • 2 eggs
  • 250 g quark
  • 1/4 cup protein powder if unsweetened, use the optional erythritol or other sweetener to sweeten
  • 1 tsp vanilla
  • 1/2 cup red currants

Optional

  • 1/4 cup erythritol or to taste

Instructions

  1. Preheat the oven to 356 F / 180C. Separate the eggs and whisk egg whites until soft peaks form.

  2. Whisk quark and egg yolks with vanilla and protein powder. Add sweetener to taste and fold in the egg whites.

  3. Pour mix in a casserole dish and sprinkle with berries. Bake for 30 - 35 minutes until it rises like a soufflee (it will collapse again once cooling) and still has a slight wobble in the middle.

  4. Ich würde sagen, dass das Creek Yoghurt fast wie unser Quark ist. Für meinen Käsekuchen mixe ich manchmal Creek Yoghurt und einen Philadelphia Cheese zusammen.
