I am back from a lovely 2-week vacation in Spain and we’ve eaten more meat than I am willing to admit!
But who can say no to a plate of Jamón Iberico when you live in a country where most ham comes out of a sealed package?
Anyways, now that we are taking a little break from our Europe Trip at my parent’s place in Bavaria, Germany, I get to take a small break from meat.
Yes, I get to cook myself again and the first thing I wanted to make, was something healthy, vegetarian and summery! Why not some vegetarian sushi using spring’s bounty??
Homemade Sushi is always top of the list when it comes to healthy food choices.
I love sushi as it is filling without feeling heavy. That is if you avoid fried rolls, tempura fillings or those awful mayo toppings!
This recipe is my new favorite vegetarian sushi for strawberry season! In these pretty sushi rolls, we combine strawberries with green asparagus and feta cheese.

A good sushi roll is all about different textures and flavors! Admittedly, this Strawberry, Asparagus & Feta Sushi is definitely not a traditional combo.
Anyways, I still love the mix of crunchy veg, sweet & juicy strawberries and salty, soft feta cheese!
You can eat it like normal sushi, with soy sauce and wasabi. If you want, substitute the soy sauce with some reduced balsamic vinegar aka. crema die balsamico.
For fans of Fusion Cuisine, these vegetarian sushi rolls with strawberries and asparagus have it all.
They are summery, fun and healthy, and make great lunch or snack for the sunny days ahead.
Variations on this vegetarian sushi recipe:
- Feel free to add some fresh basil leaves to the filling for a Mediterranean twist!
- For a vegan sushi roll, substitute some avocado for the feta cheese or use vegan cream cheese!
- For a low-carb sushi roll, use cauliflower rice mixed with a bit of cream cheese instead of white sushi rice. Try this cauliflower sushi rice recipe.
There’s a rumor out there, that making sushi at home is challenging, but believe me, IT IS NOT!

Summertime Sushi with Strawberries, Asparagus & Feta
Try this fun Vegetarian Sushi Roll with Strawberries, Green Asparagus and Feta Cheese! A fruity & summery spin on sushi!
Ingredients
- 1 recipe prepared sushi rice link in text and step 1
- 2 sheets Nori
- 1 tbsp rice vinegar
- 1 tsp wasabi
For the filling
- 6 big strawberries
- 6 stalks green asparagus or Thai asparagus
- 100 g Feta Cheese
Instructions

Prepare the sushi rice using this recipe

Wash the strawberries, trim off the green ends and cut the flesh into strips. Cut the cheese into strips as well. Trim off the ends of the asparagus, if necessary. Fill a little bowl with lukewarm water and add the vinegar. Use this mixture to moisten your hands.

Cover your bamboo rolling mat with cling film and place before you. Put one nori sheet on the mat with its rough side facing upward.Evenly spread rice over the nori while leaving space at the top and bottom of the sheet. It helps to moisten your hands with the vinegar water before touching the rice.

Spread a bit of wasabi along the center (optional) and place about 1/2 of your strawberries, asparagus and feta cheese in the center, halfway between the top and bottom of the seaweed.

Place your thumbs underneath the bamboo mat and lift the edge that is closest to you up and over the filling in the center. Curve the rest of your fingers over the bamboo mat and gently press along the length of the “log.” This motion presses the rice and the filling together and prevents the roll from being too loose.
Pull the edge of the bamboo toward you to fold it underneath your hands (as shown in the picture below), then continue to roll the sushi away from you until you’ve rolled past the far edge of the seaweed sheet.

Give the roll one good final squeeze to make sure it is sealed. Now remove the mat and set sushi aside for a few moments, to allow the damp seaweed to dry, before cutting it. Futomaki is traditionally cut into 8 pieces. To do so, make sure your knife is clean, damp, and sharp (to avoid tearing) and make a gentle cut down the middle. Move one half next to the other and cut both halves into four pieces.
Repeat with the remaining ingredients and serve with soy sauce or with a drizzle of balsam reduction!

Leider bin ich immer ein wenig zu blöd, um das so richtig selber machen zu können.. Wird immer bei mir immer nichts.
