On my last trip to Thailand, I got the chance to take a cooking course. Guess what the first dish on the “curriculum “was?

Yes, Pad Thai! Excellent, I thought! My least favorite Asian dish.

But guess what, I must have eaten it at all the wrong places for most of my life.

Here´s the real deal – the authentic Thai recipe for Pad Thai Bangkok Style that converted me into a Pad Thai lover.

When we came back it was black – that is how hot the day was and how much we swet all through the class! But you know what? I didn’t even notice the heat because I was in Pad Thai Heaven!

First off, some golden rules:

Tips for making the best authentic pad thai ever:

  1. Start with making the pad thai sauce and have it ready.
  2. Prepare all ingredients. Chop your veg and put them into a little bowl. Once your wok/pan is hot you need to act quickly.
  3. Soak your noodles in hot water until al dente.
  4. Read through the whole recipe before you start.
  5. Use 2 wooden spoons or chopsticks for stirring and have them ready.
  6. Start off with a VERY hot pan.
  7. Never prepare more than 2 portions at once. Too much content leads to extra liquids and will cook your ingredients instead of frying them.

You see, preparation and a mise en place are key when cooking authentic Pad Thai!

How to make the best ever authentic pad thai at home:

My version of Pad Thai is not vegetarian, you can totally substitute meat for tofu though. Same goes for soy instead of fish sauce and nutritional yeast instead of shrimp paste.

Remember: We are only preparing 2 portions per cooking session so if you want to prepare more you need to cook the next servings separately!

Soak the vermicelli rice noodles in hot water until al dente.

Heat the wok add the oil and toss in garlic, meat and onions. Let fry for a few minutes and add the shrimp paste. Stir for a few seconds to dissolve it.

Add the shrimps and the pickled radish and fry until the shrimps turn slightly pinkish and are almost done.

If you want to you can add the sprouts right now, or, if you prefer your sprouts rather on the raw side, a bit later.

At this point, we add the noodles and half of our prepared pad thai sauce. Stir and keep the noodles moving. Add some more water if your noodles are still a bit too hard.

Using your spoon or chop sticks, move the noodles to one corner of the pan, add a bit of oil and add the whisked egg. Sway the pan and stir the egg for about 10 seconds. Now toss everything.

Add the rest of the Pad Thai Sauce along with the sprouts, peanuts, and pepper. Stir quickly.

 

 

Feel free to add some more pad thai sauce to intensify the flavor. Once your shrimp has reached the perfect stage, stir in the spring onions and serve the pad thai immediately.

Ingredients

For the pad thai cooking sauce

  • 2 Tbsp tamarind paste
  • 5 Tbsp brown sugar or palm sugar
  • 1/2 cup hot water 120 ml
  • 6 Tbsp fish sauce
  • 2-3  tsp chili powder
  • 120 g vermicelli noodles
  • 2-3  Tbsp peanut or soy oil
  • 60-80 minced meat or tofu
  • 1/2 diced onion or 1 shallot
  • minced garlic cloves
  • tsp shrimp paste
  • 200 g little shrimp peeled
  • 3/4 cup Pad Thai sauce recipe above  (half of the prepared amount)
  • 1 egg whisked
  • Tbsp chopped peanuts
  • 1 cup sprouts
  • 2 tsp pickled raddish
  • 1/2  tsp white pepper
  • 2 Stalks spring onions or garlic sprouts
  • For serving: fresh lime sugar, fish sauce, peanuts and chili powder

Instructions

  1. Dissolve Tamarind Paste and sugar in hot water while stirring and add the remaining ingredients. Taste and add more tamarind or fish sauce if more acidity/saltiness is needed. For extra sweetness and more sugar. Just try and find the perfect balance. Good Asian cooking is all about balancing out flavors!

    ein tolles Rezept! Leider macht das Ersetzen des Fleischs durch Tofu noch kein vegetarisches Rezept daraus… hast du einen Tip bezüglich der Fischsauce?

    Habe eine Frage bezüglich dem eingelegtem Rettich. Im Asia Shop gibt es eine süße und eine salzige Variante. Welcher wird in Thailand für das Pad Thai verwendet? (Dein Produkte Link funktioniert leider nicht mehr)

  6. Tolles Rezept! Ich hab es etwas an unsere Vorräte (wir haben irgendwie immer Reste…) angepasst und nachgekocht. Hat super geklappt! Herzlichen Dank. Ich stöbere dann mal weiter in Deinem hübschen Blog!

    Wenn du mal den Rettich nicht kriegst oder eine günstige Alternative willst: Radieschen, schälen und in Würfel schneiden. Dann einen Sud aus Apfel- oder Reisessig aufsetzen, Mascobadozur zugeben, Loorbeerblatt, ein wenig Kurkuma und ein paar Pfefferkörner zugeben. Das kochst du auf und gibts es dann zu den Radieschen. Dann ziehen lassen. Ich lass es bis 1 Woche ziehen. Du kannst hier natürlich auch mit einer salzigen Variante arbeiten. Ich bevorzuge die süss/saure. So sieht das bei mir aus, wenn’s fertig ist: (Link Removed) mach weiter so, gefällt mir was du schreibst. Liebe Grüsse aus dem fernen Mexiko

    schönes Rezept und ich hatte auch sooo lange keines mehr. Mein bestes Pad Thai hatte ich in der nordthailändischen Pampa an einer Tankstelle ( !! ). Kein Mensch sprach Englisch oder Französisch, aber wir bekamen 2 Pad Thai und zwei Dosen kaltes Bier für 5 $. An diese Begebenheit hast Du mich grad erinnert.
    In Bangkok wird es übrigens noch mit einigen rohen grünen Bohnen und eiskalten Gurken serviert. Das löscht und passt perfekt.

    es ist ja anscheinend schon etwas länger her, dass du dieses Rezept veröffentlichst hast, aber ich bin jetzt erst darauf gestoßen und habe das Gefühl ich kann es nicht ungesagt lassen – Danke, für diese detaillierte Beschreibung! Ehrlich, ich liiiiiebe das Pad Thai. Ich war im Februar, als das Reisen noch möglich war, in Thailand und nun auf der Suche nach einem Rezept und es schmeckt einfach genau wie in den Straßen von Bangkok *-*

    So, nachdem ich das Rezept jetzt schon diverse Male nachgekocht habe und meine Reisbandnudeln aktuell einweichen, möchte ich die Zeit jetzt mal nutzen um dir für das tolle Rezept zu danken! Es schmeckt echt authentisch wie in Thailand, das finde ich und viele bekochte Gäste ebenfalls. Und der eingelegte Reddich ist ein Muss, der hält sich zum Glück ja lange im Kühlschrank, so dass ich nicht ständig deshalb zum Asia Markt muss 🙂
