Seriously, these Biscoff Oatmeal Cookies are life- and friendship-safers! The secret? Lotus Biscoff Spread aka Cookie butter. The stuff that we all love. Me personally even more so than Peanut Butter!

The key ingredient here is of course the spread. I´ve seen it at a few grocery stores so just look around at your local stores. If you can’t find it, you can order it online. But I should warn you, it is addicting!
Biscoff Oatmeal Cookies | Taste just like Lotus Cookies
If you love Lotus Cookies THIS is your new favourite recipe. These Biscoff Oatmeal Cookies are crispy on the outside and slightly chewy on the inside. Perfect with a cup of coffee.
Ingredients
- 1 1/2 cups old fashioned oats
- 1/2 cup all-purpose flour plus 2 tablespoons of flour
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/8 tsp salt
- 1/2 cup butter at room temperature
- 1/2 cup Biscoff Spread or Cookie Butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1/2 tsp vanilla extract
Instructions

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat.

In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt. Set aside.

In the bowl of a stand mixer, add the butter, Biscoff spread, sugar, and brown sugar and beat on medium speed until smooth and creamy. Add the egg and vanilla extra and beat until smooth.

Reduce the mixer speed to low and slowly add the dry ingredients, beating only until blended. Chill the dough 30 minutes in the refrigerator.

Form the cookie dough into rounded tablespoons and place them 2 inches apart on the baking sheet. Bake for 8 to 10 minutes or until cookies are golden and just firm around the edges. Let the cookies cool on the baking sheet for 5 minutes and then remove with a spatula onto a cooling rack.

Tolles Rezept! Leider sind sie bei mir sehr flach geworden – aber geschmacklich echt megaaaa!!! 🙂
So eine tolle Idee aus dem Aufstrich Cookies zu machen! Ich habe die Cookies vegan gebacken (statt Butter Margarine und das Ei ersetzt) und ich habe den Zucker weggelassen, da der Aufstrich süss genug für mich war. Der Teig ist sooooo super lecker!! Ich liebe sie, es werden meine neuen Lieblingscookies! Nur leider sind sie beim ersten Mal nicht flach geworden und beim zweiten Mal habe ich sie vor dem Backen flach gedrückt. Wenn sie abgekühlt sind, mache ich mir ein Eissandwich draus?. Danke für die Rezeptidee!:)
