Up your Taco Tuesday Game with these healthy Chipotle Shrimp Lettuce Wraps! 

I freaking love lettuce wraps! 

They’re easy to make, super healthy, low-carb & can even be made keto and they are so DELICIOUS!

We have them at least 3 times a week. I’m not kidding! Living in Mexico comes with many advantages, one of them being that every day is Taco Tuesday. Starting with breakfast.

Needless to say that all those tortillas will mess with your bikini bod. Yeah, have I mentioned that every day is bikini day on the Yucatan Peninsula? 

But whether you’re a taco addict or not, replacing tortillas with lettuce leaves is definitely the thing to do if you want Taco Tuesdays but want to cut down on the carbs.

You will not miss the tortillas, trust me. My husband actually explicitly asks for lettuce instead of tortillas at the restaurant now because he got to love them that much.

Guys these shrimp lettuce wraps are the BOMB. The lettuce leaves add a delicious crunch and freshness. 

Today’s lettuce wraps are loaded with tender honey chipotle shrimp and a creamy mango cilantro sauce.

The spiciness and smokiness from the chipotle shrimp, along with the fresh crunchy veggies, sweet mango cubes and the creamy tangy cilantro sauce makes a delicious flavor-packed combo that is out of this world!

How to make Honey Chipotle Shrimp Lettuce Wraps: 

Chipotle Shrimp has SO much flavor and it cooks in a flash! And the prep work is minimal if you use pre-peeled shrimp.

Start by making the marinade – a sweet and smoky chipotle sauce just spicy enough to make your mouth tingle enveloping tender perfectly cooked shrimp.

All ingredients are simply blended in your food processor until you have a smooth paste

The peeled thawed or fresh shrimp are then quickly marinated in out sweet and spicy chipotle marinade, then cooked on the grill for a charred flavor. You can also sear the shrimp in a hot skillet.

By the way…the honey chipotle marinade tastes so good on its own!

How to make Creamy Mango Cilantro Sauce: 

Again, this one is so easy, you don’t even need a recipe. Just pop all ingredients into your blender and blend until smooth. Taste and add more salt is needed. 

This easy creamy tacos sauce can be made up to 4 days in advance and stored in the fridge in an airtight container or a bowl covered with cling film.

Now it’s time to assemble your lettuce wraps: 

For serving, make sure you have all your taco toppings ready in small bowls.

For these healthy grilled shrimp lettuce wraps I like to use: 

  • Radishes, cut into fine strips.
  • Red cabbage, sliced
  • Mango cubes
  • Cilantro, chopped.

Take a lettuce leaf and load with toppings and shrimp and drizzle with mango cilantro sauce. If you like it spicy, add a couple of dashes of sriracha or hot sauce.

Tips for the best Grilled Shrimp Lettuce Wraps: 

  • Marinade the shrimp for max. 30 minutes in the fridge, but not any longer than that. Seafood can’t marinade as long as meats as the acid in the marinade will start to break down the shrimp.
  • To make the perfect lettuce cups/wraps: Trim and discard any tough outer lettuce leaves. Hold the whole head of lettuce, cut-core side up under cold running water. Carefully place single lettuce leaf cups in a large plastic bag or on a plate and refrigerate for a few hours until they’re ultra-crisp and ready to use.
  • These healthy lettuce wraps are great for meal prepping. Store the lettuce and filling separately, and assemble when ready to eat!
  • Like it spicy? Top your shrimp with a few tablespoons of Sriracha.

Which lettuce shall I use for lettuce wraps? 

 I love using butter lettuce but romaine hearts, or even collard greens would be delicious as well. Or you can rethink this whole dinner and serve the honey chipotle shrimp over some cauliflower rice or zoodles. 

The Creamy Mango Cilantro Sauce is a must though guys. It’s too good to skip.

Paleo Chipotle Shrimp Lettuce Wraps with Mango Cilantro Sauce

These Shrimp lettuce wraps are filled with sweet and spicy honey chipotle shrimp and are served with creamy mango cilantro sauce. These flavor-packed tacos make the perfect handheld appetizers, healthy game day snack or low-carb lunch or dinner!

Ingredients

Mango Cilantro Sauce

  • ¼ cup sour cream or dairy-free sour cream
  • ¼ cup mayo or more sour cream for a lighter sauce
  • ½ cup mango chunks
  • ½ lime
  • ¼ tsp salt + more if needed
  • ¼ cup cilantro

Shrimp Marinade

  • 2 garlic cloves peeled
  • 2 big - 3 medium chipotle chilis in adobo
  • ½ tbsp paprika powder
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • fresh cilantro
  • 1 tbsp olive oil
  • ½ lime juiced
  • ½ tsp salt
  • 1 tbsp honey

Shrimp:

  • 2 cups shrimp thawed or fresh, peeled without heads
  • 1 tsp coconut oil

Add ins

  • ¼ head red cabbage shredded
  • 10 Radishes cut into strips
  • 1 Mango in fine cubes
  • 1/2 bunch Cilantro chopped
  • 2 small heads Butter Lettuce

Instructions

  1. Rinse the shrimp with cold water, drain and pat dry with paper towels. Set aside

  2. Combine all marinade ingredients in a blender or food processor and blend to a smooth paste. Stir in the shrimp, and mix well to thoroughly coat. Marinate for at 30 minutes in the refrigerator.

  3. For the sauce, combine all ingredients in your blender and pulse until smooth. Taste and add more salt or lime juice, if needed. Prep all your add ins. Separate the lettuce leaves from the head and refrigerate on a plate until serving.

  4. Heat a skillet on high heat and add 1 tsp of coconut oil. Add 1/3 to half of your shrimp to the very hot skillet and fry for about 1 minute per side until they are nicely charred and has changed from gray/translucent to light pink.

  5. Add shrimp and toppings to lettuce, drizzle with mango cilantro sauce, and garnish with chopped cilantro.
