This Middle Eastern Tomato Salad with Pomegranate Sumac Dressing ist one of my favourite summer dishes!
Tomato Salad can be quite boring but this sweet and sour version will tickle your tastebuds and bring back memories of holidays in the Middle East.
For 2 servings
4- 5 Tomatoes
Seeds of 1 Pomegranate
1 Tsp Sumac
1/2 Tsp Cumin (optional)
4 Tbsp Olive Oil
1 Tbsp Lemon Juice
2 Tbsp Pomegranate Molasses
Slice the Tomatoes and knock the seeds out of the pomegranate gathering them in the same bowl making sure to collect the juice. We can mix it into the dressing as well. Make a dressing out of the remaining ingredients and season with salt to taste.
Pour over the salad and serve with warm Pita.
Tip: separate the seeds from the Pomegranate by either quartering it and submerging underwater as you loosen them out with a fork, then strain off; or halve the Pomegranate and thwack it with a wooden spoon.
