German Plum Cake with Streusel Topping (Zwetschgendatschi)

Ingredients
For the Dough:
300g2 1/2 cups flour
100g1/2 cup sugar
Zest of 1 lemon
150g2/3 cup butter
1pinchsalt
1/2packet baking powder8 g or 1 tsp
1egg + 1 egg yolklarge
For the Topping:
1.2kg2 1/2 lbs plums, not too soft
3tbspbreadcrumbs or ground nuts
3tbspbrown sugar
2packets bourbon vanilla sugarapprox. 1 1/2 tbsp
1 1/2tspcinnamon
For the Streusel:
120g1/2 cup butter
80g1/3 cup sugar
170g1 1/3 cups flour
1tube Dr Oetker butter vanilla flavor or 1 tsp vanilla paste
Instructions
**Prepare the Plums:**
Wash, pit, and quarter the plums. Watch the video for getting my secret plum-cutting hack! Then keep them cool.
**Prepare the Dough:**
Combine all the ingredients for the dough in a bowl and mix with a hand mixer until smooth.
Grease a half baking sheet with a rim and spread the dough evenly on it.
Sprinkle the dough with breadcrumbs.
**Add the Topping:**
Spread the prepared plums evenly over the dough.
Mix the brown sugar, vanilla sugar, and cinnamon well, then sprinkle evenly over the plums.
**Preheat the Oven:**
Preheat the oven to 350°F (180°C).
**Make the Streusel:**
Combine the ingredients for the streusel in a small bowl and knead into a crumbly dough with your fingers.
Spread the streusel evenly over the plums.
**Bake the Cake:**
Bake the cake on the middle rack for about 50 minutes until the streusel is golden brown and the cake is baked through.
