Vegan White Bean Blondies with Peanut Butter & Chocolate | Sugar-free and low-cal

My Vegan White Bean Blondies with peanut butter & chocolate make for the perfect healthy snack or guilt-free dessert! Not only are they sugar-free, gluten-free and easy-to-make, but also incredibly delicious! These healthy peanut butter blondies are full of plant-based protein from beans, peanut butter, and peanut butter powder!

Ingredients

  • 600 g white beans canned or cooked dried beans
  • 4 tbsp peanut butter powder
  • 2 tbsp peanut butter
  • 2 pinches salt
  • 2 tbsp stevia or 10 dates soaked in hot water or powdered or liquid sweetener of your choice
  • 70 ml maple syrup
  • 2 tsp vanilla extract
  • 1/4 tsp ground nutmeg
  • 2 tsp baking powder

  • 2 tbsp peanuts
  • 50 g dark chocolate
  • 1/2 tsp sea salt

Instructions

  1. A note before you start! 

    I use this brand of powdered peanut butter to add extra peanut flavour to these white bean blondies and highly recommend you do the same. If you do not want to use powdered peanut butter, make sure to make up for the loss of flavour by adding more peanut butter or other spices and aromas!  

  2. Soak the dates, if using, in hot water overnight. If using dried beans, soak them overnight and prepare according to the instructions. Drain well and let cool down.  If using canned beans, rinse and drain them thoroughly.

  3. Preheat the oven to 350 F and line a small brownie pan with parchment paper ( 20cm x 20 cm or 23 x 23 x 5) 

  4. If using dates, remove them from the hot water and add them to the bowl of your food processor, together with the maple syrup. Pulse quickly. Add all other ingredients apart from the baking powder and pulse until smooth. Stir in the baking powder and mix well.  Taste the batter and add more sweetener, if you like.

  5. Spoon the batter into the lined pan and smooth out the surface. Sprinkle with chopped nuts, chocolate, and salt and bake for 20 to 25 minutes until the surface looks dry and little cracks are visible. Remove from the oven and let cool, then cut into squares and enjoy.
