Vegan Overnight Oats with Pistachios, Rosewater & Pomegranate

These healthy vegan overnight oats with pistachios, rosewater, and pomegranate arils are the perfect romantic breakfast for Valentine's Day!

Ingredients

For the overnight oats

  • 120 g rolled oats
  • 2 tbsp chia seeds
  • 1/4 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 tsp rosewater
  • 500 ml coconut milk or cashew milk
  • 1 1/2 tsp Stevia

Pistachio Cream

  • 1 cup raw pistachios shelled
  • 1 cup coconut milk
  • 1 tsp stevia

Other toppings

  • 2-4 tbsp chopped pistachios
  • 1/2 pomegranate seeds removed

Instructions

  1. Stir all ingredients for the overnight oats together and chill in a sealable container for 8h or overnight. 

  2. Make the pistachio cream. Drain and rinse the pistachios and place in a high-speed mixer (I use my Vitamix) and blend with the rest of the ingredients until very smooth. If too thick, add some more milk. The consistency should be a bit thinner than sour cream. Refrigerate overnight. 

  3. The next morning, stir your overnight oats and stir in 2 tbsp of pistachio cream, if you want your oats a bit creamier. Divide the oats between 2 bowls and decorate with chopped pistachios, dollops of pistachio cream, pomegranate seeds and whatever else you want. Enjoy! 

Recipe Notes

How to make the best vegan overnight oats:

  • Make sure to stick to a 2:1 ratio of liquid to rolled oats when making vegan overnight oats to achieve a perfect spoonable, porridge-like consistency.
  • Add a big pinch of salt to your liquid oat mixture before refrigerating you overnight oats. It will add so much flavor to your oats and will definitely not make them taste savory!
  • Old-fashioned rolled oats are the best choice when it comes to making overnight oats. Instant oats often dissolve into mush and steel cut oats stay too hard, but rolled oats give you that creamy, smooth texture with just the right amount of chew.
  • Give your vegan overnight oats that good final stir after taking them out of the fridge
  • Your oats will get thicker from day to day. If you like them more liquid, stir in some more milk or pistachio cream before eating.
