Ingredients

  • 2 tbsp instant espresso powder
  • 6 tbsp amaretto almond liqueur
  • 250 g ladyfinger
  • 250 g mascarpone or cream cheese or vegan cream cheese
  • 100 g soft butter or vegan butter
  • 1 tsp vanilla
  • 2 tbsps icing sugar
  • 4 drops of rum flavor optional
  • 1/2 teaspoon orange zest optional
  • 100 g cocoa

Instructions

  1. Dissolve the espresso powder in the amaretto.
  2. Crush the ladyfingers. (Put in a freezer bag and smash with a rolling pin or grind in a food processor).
  3. Beat together butter and mascarpone with vanilla, rum aroma, and orange zest with a hand beater, then pour the amaretto mixture over biscuit crumbs and knead together with the mascarpone butter. Taste the mix and add sugar if needed. It should be a cookie-dough like mix.

  4. Chill the mixture for 30 - 45 minutes to let it set.
  5. Form small balls and roll them in the cocoa.
  6. Store in the refrigerator or in the freezer. The alcohol prevents them from getting too hard in the freezer so you can just take them out of the freezer, let them sit for a couple of minutes, and enjoy.
