Easy Honey Fritters ( Beltane Honey Cakes )

Ingredients

  • ½ cup sweet white wine Riesling or Moscato
  • 2 tablespoons sugar white sugar - use stevia for refined sugar free
  • 1 egg
  • 1 cup honey runny - we need it for dipping
  • 2/3 cup flour
  • 1/4 teaspoon cinnamon
  • 1/8 tsp ground cloves
  • 1 pinch cardamom optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • neutral oil for frying

Instructions

  1. Beat the wine and the egg in a medium bowl until smooth. Combine the flour, cinnamon, cloves, cardamom, salt, and sugar in a small bowl. 

    Stir into the egg mixture. Let the batter stand for 30 minutes. In the meantime, combine the honey and the nutmeg in a small bowl.

  2. Heat ½-inch of the oil in a frying pan until hot, but not smoking (350F). Drop the batter into the oil 1 tablespoon at a time; fry until golden brown. Drain on paper towels. Dip into the honey.

Recipe Notes

  • We need runny honey for this recipe as we use it for dipping.
  • Use neutral-tasting vegetable oil for the best results.
  • If you do a lot of deep-frying, I recommend investing in a deep-frying thermometer (or a candy thermometer) to gauge the heat of your oil.
  • As for the temperature of the oil, for doughnuts of all sorts, and also for this honey fritter recipe, I would aim at a temperature between 360 and 375 degrees F! This will give you the best results.
  • If you plan to leave an offering to the fairies, double the recipe to keep some for your family.
