Quick Apple Bread with Rosemary & Sunflower Seeds

A moist quick apple bread spiced with cinnamon, nutmeg, rosemary and pepper and loaded with fresh apples and healthy sunflower seeds. So easy, you don't even need a mixer, and your house will smell like heaven

Ingredients

  • 2 cups flour
  • 2 tsp salt
  • 2 tsp baking powder
  • 3 - 4 tbsps sugar
  • 2 tbsps rosemary
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp ground pepper
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup olive oil
  • 4 tbsps sunflower seeds
  • 1 big or 2 small apples

Instructions

  1. Preheat the oven to 350 F, or 175 C.
  2. Line a loaf pan with parchment paper.
  3. Toast the sunflower seeds in a pan without oil and let cook. Peel, core and chop the apple.
  4. Mix flour, salt, baking powder, sugar and spices in a bowl. In a separate bowl, whisk buttermilk, eggs and oil. Add the wet mix to the dry ingredients and stir with a spatula until a wet, sticky batter forms.
  5. Little clumps are no problem. Make sure not to overmix the batter.
  6. As the last addition, add sunflower seeds and apple chunks, stir quickly, then spread batter in your lined loaf pan.
  7. Bake for 45-50 minutes until the sides start to brown. Test with a wooden skewer for doneness. Insert it into the middle of the cake and check, if there is any wet batter sticking to it. If not, your Apple Bread is done!
  8. Serve warm with salted butter!
