Brandy Cherry Ice Cream with Goat Cheese and Chocolate
This Brandy Cherry Ice Cream with Goat Cheese or Cream Cheese is an elegant summer treat for adults. An ultra creamy Goat Cheese Ice Cream Base with a Brandy Cherry Swirl, chopped Cherries and Chocolate Chips!
60gspreadable goat cheese or cream cheese room temp
2Tbsp Brandy
For the Brandy Cherry Swirl
250mlcherry juice *
250mlbrandy
1bis 2 cloveoptional
1piece of cinnamon barkoptional
170gsugar
150gchopped cherriesfresh or from the brandy cherry jar
100gdark chocolate chips
2Tbsp Brandy
Instructions
In a bowl, stir together 1⁄4 cup milk and the cornstarch; set slurry aside. In a 4-qt. saucepan, whisk together remaining milk and the cream, sugar, syrup, and salt; bring to a boil over medium-high heat. Cook for 4 minutes; stir in slurry. Return to a boil and cook, stirring, until thickened, about 2 minutes. Stir in the 2 tbsp of brandy. Place goat cheese in a bowl and pour in 1⁄4 cup hot milk mixture; whisk until smooth. Then whisk in remaining milk mixture. Pour mixture into a plastic bag; seal, and submerge in a bowl of ice water until chilled or just chill it in the fridge overnight.
For the syrup
Mix cherry juice and brandy or the juice from the brandy cherry jar with sugar and spices and bring to a boil in a pot. Reduce the temperature and let simmer on low heat until reduced to a third, about 160 ml.Let the syrup cool completely.
Pour the ice cream base into an ice cream maker and process according to manufacturer's instructions. Once it reaches the consistency of soft serve ice cream, stir in the brandy, chocolate chips and the chopped cherries.
Now spread half of the ice cream into your storage container and drizzle half of the syrup on top. Spread the second half of the ice cream base on top and add the second half of the syrup and some chocolate chips for decoration.
Freeze for another 2 to 3 hours until you reach the desired consistency.

Recipe Notes
* if you have a jar of brandy cherries, you can use the liquid from the jar. Depending on the size of your jar you might have to add some juice or brandy to get to the 500 ml mark
