High Protein Beet Oatmeal Bake 

My high protein Beet Oatmeal Bake is made with protein powder, healthy oats and roasted beets. The perfect healthy breakfast bake that is perfect for Valentine's Day or any other occasion that calls for vibrant pink!

Ingredients

  • 2 cups old-fashioned oats
  • 1/3 cup packed xylitol
  • 1 teaspoon baking powder
  • 2 scoops protein powder
  • 1 tbsps chia seeds optional
  • 1/2 tsp cinnamon
  • 1/4 teaspoon salt
  • 1 beetroot
  • 1 1/2 cups milk
  • 2 tablespoons coconut oil
  • 1 egg
  • 1 tbsp vanilla extract
  • 1/3 cup cocoa nibs or dairy free chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with some nonstick cooking spray and set aside.
  2. In a large bowl, combine the oats, chia seeds, cinnamon, xylitol, protein powder, baking powder, and salt.

  3. In a blender puree beet with milk, coconut oil, egg and vanilla.
  4. Add the milk mixture to oat mixture; stir well.
  5. Pour the oatmeal mixture into the prepared pan, sprinkle with cocoa nibs or dairyfree chocolate chips and bake for 30 to 35 minutes or until the oatmeal is set and golden
