Chocolate Gingerbread Mousse

Ingredients

  • 5 ¼ oz. 70% chocolate coarsely chopped
  • 14 oz. cold heavy cream
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/8 tsp nutmeg
  • 3 large egg whites
  • 1 oz. sugar
  • shaved chocolate for garnish optional

Instructions

  1. Put a medium to large bowl in the freezer.

  2. Heat the chocolate in a large bowl over a bain marie. Stir until melted. Remove from heat and set aside.

  3. Take the bowl out of the freezer. Beat the cream until soft peaks form. Add the spices and set aside.

  4. Whip the egg whites to soft peaks. Gradually add the sugar and whip until firm.
  5. Using a whisk, fold the egg whites into the chocolate. When almost completely incorporated, fold in the whipped cream.
  6. Cover and refrigerate at least 1 hour.
