Beat the wine and the egg in a medium bowl until smooth. Combine the flour, cinnamon, cloves, cardamom, salt, and sugar in a small bowl.
Stir into the egg mixture. Let the batter stand for 30 minutes. In the meantime, combine the honey and the nutmeg in a small bowl.
Heat ½-inch of the oil in a frying pan until hot, but not smoking (350F). Drop the batter into the oil 1 tablespoon at a time; fry until golden brown. Drain on paper towels. Dip into the honey.
