But I know it can be hard to get hold of quark outside of Germany.<\/p>\n<p>For many of my German Cheesecake recipes, like my <a href=\"https:\/\/cinnamonandcoriander.com\/en\/german-rhubarb-cheesecake-with-quark\/\">German Rhubarb Cheesecake<\/a> or my <a href=\"https:\/\/cinnamonandcoriander.com\/en\/traditional-german-cheesecake-with-poppy-seeds\/\">Traditional German cheesecake<\/a> you guys are asking me what to use instead of quark.<\/p>\n<p>So I wanted to give you a recipe that tastes 100% like a German cheesecake but requires<strong> no quark.<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1800\" class=\"alignnone wp-image-22225 size-full\" src=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2022\/07\/german-raspberry-crumble-cheesecake-2.jpg\" alt=\"German Raspberry Crumble Cheesecake on a wooden board with one slice missing\" data-pin-description=\"This Baked German Raspberry Crumble Cheesecake is a summery twist on Oma's Old fashioned German cheesecake recipe! Knead the flour, sugar, vanilla sugar, cold butter (in pieces), and egg together by hand or in a food processor to form a smooth dough.<\/p>\n<p>Divide the dough into two parts: \u00be is needed for the crust and base and \u00bc for the crumble topping.<\/p>\n<p>Shape 3\/4 of the dough into a ball, then flatten it into a disc. I use a rolling pin to already roll it out a bit. Wrap the dough in cling film and place it in the fridge &#8211; for about 30 to 1 hour.<\/p>\n<p>Put the crumble into a bowl and store it in the fridge.<\/p>\n<p>After cooling, press \u00be of the dough into a lined springform pan (9 inch \/ 23 cm) lined with baking paper, pulling up an edge of approx. to 4 cm. Put the springform pan in the fridge and prepare the cheese mixture.<\/p>\n<p>If the dough gets too soft when you handle it, cool it in the pan until it hardens a bit.<\/p>\n<h3>Make the filling:<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"600\" class=\"alignnone wp-image-22218 size-full\" src=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2022\/07\/himbeer-kasekuchen-streusel-1.jpg\" alt=\"picture collage demonstrating how to make German Raspberry Crumble Cheesecake\" data-pin-description=\"This Baked German Raspberry Crumble Cheesecake is a summery twist on Oma's Old fashioned German cheesecake recipe! Make sure to reduce the speed and only mix as long as needed to incorporate the eggs and also stir in the custard powder.<\/p>\n<p>Mix just until everything is combined.<\/p>\n<p>Pour the cream cheese mixture into the mold and smooth it out. Spread the raspberries over top. If using frozen berries, mix the frozen raspberries with 1 tablespoon of cornstarch beforehand.<\/p>\n<p>With the leftover \u00bc of the dough, you want to make the crumble topping! Tear it into small pieces and spread it over the raspberries. Bake at 350 F \/ 180 C for 1 h.<\/p>\n<h2>When is my cheesecake done?<\/h2>\n<p>My springform pan is 23cm in diameter and the baking time was just over an hour! With frozen raspberries, you have to bake the cake at least 10 minutes longer. If you have a bigger or smaller springform pan it can be done earlier or later. With a 10 inch it might be done in 50 minutes.<\/p>\n<p>First, bake the cake undisturbed in the hot oven for about 40 minutes.<\/p>\n<p>If you find that the crumbles are browning too quickly, cover the cake with aluminum foil and bake for another 20 minutes. Dr. Oetker is the brand, and if you click the hyperlinks above, it\u2019ll take you to Amazon where you can purchase these ingredients.<\/li>\n<li>As far as substitutions go, you could use vanilla extract in place of the Dr Oetker vanilla sugar, but the vanilla pudding powder is a must!<\/li>\n<li>Again, if you cannot find quark and cannot find skyr either,\u00a0 use ricotta!<\/li>\n<li>Let the cake cool down gently, slowly and completely, to room temperature.<\/li>\n<li>This cake tastes best when it has had time to chill in the fridge overnight.<\/li>\n<li>You could always experiment with this recipe by adding a different fruit like blueberries, cherries or even chocolate chips instead of raspberries.<\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">\u2605 <\/span><b>Did you make and love this German Raspberry Cake recipe?
