It will add so much flavor to your oats and will definitely not make them taste savory!<\/li>\n<li><strong>Old-fashioned rolled oats are the best choice<\/strong>\u00a0when it comes to making overnight oats. Instant oats often dissolve into mush and steel cut oats stay too hard, but rolled oats give you that creamy, smooth texture with just the right amount of chew.<\/li>\n<li><strong>Give your vegan overnight oats that good final stir after taking them out of the fridge<\/strong>.<\/li>\n<li>Your oats will get thicker from day to day. You can sometimes get them shelled these days but I was not that lucky.<\/p>\n<p>Move over avocado hand, pistachio thumb is the new hipster injury. I hope you won&#8217;t find out what it is.<\/p>\n<p>I like to toast my pistachios on a tray in the oven at 150 C, or 300 F for 8 minutes. Let them cool down for 2 minutes.<\/p>\n<p>Now, transfer the pistachio nuts to a glass bowl and cover them with water. Chill in the fridge overnight. Remove the purple shells before blending. This is easier once the pistachios are soaked.<\/p>\n<p>For 1 small container of vegan pistachio cream, I use 1 cup unshelled pistachios and 1 cup of cashew, almond, or coconut milk. It is important to add a big pinch of salt along with the stevia to get more depth of flavor.<\/p>\n<p>Blend until you have a smooth pastel green cream and transfer to a sealable container.<\/p>\n<p>The vegan pistachio cream lasts in the fridge for at least a week. It will firm up with time, so stir in some water or nut milk so make it smoother.<\/p>\n<h3>Variations on this Healthy Vegan Overnight Oats recipe:<\/h3>\n<ul>\n<li>You can add any chopped nuts or fruit you like to these cinnamon overnight oats. Make sure to reserve mix-ins like nuts, seeds, fresh fruit, granola, and coconut flakes for the morning.<\/li>\n<li><strong>Chia seeds and chopped dried fruit<\/strong> can be adding at night, as chia seeds do need time to absorb liquid and dried fruit will need some time to plump up.<\/li>\n<li>You can use <strong>ground flax seeds<\/strong> instead of chia seeds if you prefer that.<\/li>\n<li>No pomegranates available? Including myself.<\/p>\n<p>But the truth is, that you can remove the seeds of a pomegranate fruit quite easily:<\/p>\n<ul>\n<li>Roll the pomegranate to loosen the seeds.<\/li>\n<li>Score around the middle and gently tear it open into halves.<\/li>\n<li>Hold each half over a bowl with the seeds facing down and tap the skin with a wooden spoon.
