I haven&#8217;t always been one, though! When I grew up back in Germany, my granny used to cook lunch for the whole family every day. And there was always some kind of soup before the main course.<\/p>\n<p>Now, don&#8217;t get me wrong, we were not fancy people. My family just believes\u00a0that soup is a universal remedy and should be eaten every day.<\/p>\n<p>Then came the years of rebellion, when I wouldn&#8217;t like to eat soup or anything really, that my granny made. A pretty serious issue.<\/p>\n<p>See, I actually grew up with 19th-century author Heinrich Hoffmann&#8217;s collection of children&#8217;s stories, one of which is solely dedicated\u00a0to the disastrous consequences of soup &#8211; refusing. I&#8217;ll sum it up for you! Augustus, a healthy strong boy, proclaims that he will no longer eat his soup. Over the next five days, he dies.<\/p>\n<p>Well, I clearly lasted a bit longer. It is a savory Vietnamese noodle soup, usually beef-based. It&#8217;s has a unique and aromatic flavor\u00a0from a curious blend of spices. Normally, it uses beef bones for the broth, but in our vegan pho recipe, we use vegetable broth.<\/p>\n<p>Personally, I cannot imagine swapping my beloved oatmeal for noodle soup in the morning, but I do see how a bold vegetable loaded Pho could serve as an energy source for a whole hard working day.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"667\" class=\"aligncenter wp-image-5596\" src=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2017\/03\/vegan-vietnamese-noodle-soup-pho-authentic-recipe.jpg\" alt=\"Vegan Vietnamese Noodle Soup Pho served in a small white bowl with lime wedged on the side\" srcset=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2017\/03\/vegan-vietnamese-noodle-soup-pho-authentic-recipe.jpg 1000w, https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2017\/03\/vegan-vietnamese-noodle-soup-pho-authentic-recipe-150x100.jpg 150w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<h3><strong>Why a bowl of Pho is always a good idea:\u00a0<\/strong><\/h3>\n<p>Trust me, if you are feeling under the weather and think you might come down with a cold, my Vegan Vietnamese Pho Noodle Soup might be just what you need.<\/p>\n<p>In fact, Pho has the same comforting effect as chicken soup \u2014 but with a lot of fragrant spices added to it. I like to make a huge pot and freeze it in portions so that I have some ready whenever I need a little pick-me-up.<\/p>\n<h3>How to make Vegan Vietnamese Pho Noodle Soup:<\/h3>\n<p>In any authentic pho broth, cinnamon and star anise lead the charge, more subtle notes come from cloves and cardamom. Do not be fooled by the small amount listed in the recipe. Believe me, this pho really packs a punch!<\/p>\n<p>We roast the spices before we add them to the broth and they will become very strong. Along with the whole spices, I am adding roasted onions, ginger and lemongrass to the broth, which gives the soup sweetness, a hint of heat and a certain smokiness!<\/p>\n<p>Make sure to brown the ginger and onion for a minimum of 5 minutes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"539\" class=\"aligncenter wp-image-5598\" src=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2017\/03\/ingredients-for-pho-noodle-soup.jpg\" alt=\"fresh herbs and mushrooms on a plate ready to go into a vegan pho noodle soup\" srcset=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2017\/03\/ingredients-for-pho-noodle-soup.jpg 1000w, https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2017\/03\/ingredients-for-pho-noodle-soup-150x81.jpg 150w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>Of course, the authentic Pho Broth is made with beef bones. For our vegan version, we are using vegetable broth instead.<\/p>\n<p>You can use good quality broth powder to make the 2 l of broth needed for the recipe. I like to use <a href=\"\/\/www.amazon.ca\/gp\/product\/B006UXG87K\/ref=as_li_tl?ie=UTF8&amp;camp=15121&amp;creative=330641&amp;creativeASIN=B006UXG87K&amp;linkCode=as2&amp;tag=cinncori-20&amp;linkId=380c830e924a9197fe7c83c4533d971f\" target=\"_blank\" rel=\"nofollow noopener\">Organic Yeast-Free Vegetable Broth Powder<\/a><img decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"\/\/ir-ca.amazon-adsystem.com\/e\/ir?t=cinncori-20&amp;l=am2&amp;o=15&amp;a=B006UXG87K\" alt=\"\" border=\"0\" \/>\u00a0as it has no artificial additives and I really enjoy the flavour.<\/p>\n<p>Do keep the broth rather light, though!
