You have not idea what you are missing out on! It is a true explosion of textures and tastes!<\/p>\n<p>Think of it as a sponge cake with a crunchy, crackling meringue top, and a to-die-for<strong> cream or custard filling<\/strong>!<\/p>\n<p>I used to bake this cake in Germany all the time, often using strawberries and a simple vanilla custard as a filling.<\/p>\n<p>Upon my arrival in Canada, I decided to put a <strong>Canadian twist on this German cake classic<\/strong>. I went with a combination of<strong> frozen wild blueberries<\/strong> and a light and tangy <strong>whipped cream filling<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"640\" height=\"426\" class=\"aligncenter wp-image-459\" title=\"German Blitz Torte\" src=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2015\/06\/Blaubeer-Schmand-Torte-mit-Baiser1.jpg\" alt=\"German Blueberry Meringue Cake (Blitz Torte) on a cake platter\" srcset=\"https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2015\/06\/Blaubeer-Schmand-Torte-mit-Baiser1.jpg 640w, https:\/\/cinnamonandcoriander.com\/wp-content\/uploads\/2015\/06\/Blaubeer-Schmand-Torte-mit-Baiser1-150x100.jpg 150w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>To stabilize my whipped cream without the use of gelatin, I used a packet of <a href=\"\/\/www.amazon.com\/gp\/product\/B06XP1G1SN\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B06XP1G1SN&amp;linkCode=as2&amp;tag=cinncori04-20&amp;linkId=a4a7f62623b596873a83a94c0182172a\" target=\"_blank\" rel=\"noopener\">Dr. Oetker Whip It<\/a><img decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"\/\/ir-na.amazon-adsystem.com\/e\/ir?t=cinncori04-20&amp;l=am2&amp;o=1&amp;a=B06XP1G1SN\" alt=\"\" border=\"0\"> and added a bit of cream cheese.<\/p>\n<p>This gives the cream filling a slight tanginess which reminds me of cheesecake! Needless to say, that this cheesecake-like cream goes incredibly well with wild blueberries!<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">&nbsp;<\/div>\n<p>This<strong> Blueberry Blitz Torte<\/strong> is such a quick and easy cake to make around the Easter holidays! Beat until stiff.&nbsp; Spoon half of the egg white mixture on the batter in one of the pans and spread evenly using an offset spatula. Sprinkle with some almonds. Repeat with the second springform. Bake cakes for 20 to 25 minutes.&nbsp; Take cakes out of the pan and let cool.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p>Remove blueberries from the freezer and let sit for about 5 minutes. Mix powdered sugar with Whip it. Start to whisk the cream, sprinkling in the whip it-sugar-mix in as you continue to whisk. Add the softened cream cheese tbsp by tbsp as soon as the whipped cream starts to form soft peaks. Do not over whisk. Stir in vanilla and half-frozen blueberries.&nbsp;<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p>Put a metal cake ring around one of the almond meringue cakes. Spoon the blueberry cream on top, spread evenly and put the second sponge on top, almond-side facing up.
