Seriously, vegan mug cake in a minute

All the things you love most about cake OR cinnamon rolls – made in a minute! You can’t even run down to the shop for a Snickers that quickly, and I used to live right above a convenience store!

I could seriously take a single flight of indoor stairs to a 24-hour purveyor of all things snacky, and this vegan cinnamon roll mug cake is still quicker!

Why you will love this vegan mug cake recipe: 

But how? It sounds too good to be true!

How, you ask? Simple: microwaves are magic. It’s a wonder we muggles can even operate the things.

How else could you simply throw all the ingredients of this easy Vegan Mug Cake into your favorite giant owl-shaped coffee mug and expect there to be piping hot, delicious cake a minute later?! Accio little spoon!

Truthfully, there are even recipes out there that are a little quicker than mine, because I do add a cinnamon butter swirl AND a vegan icing. But for me, those are essential parts of a cinnamon bun and NEED to be featured.

So after extensive testing (Oh gods, so much testing) this Vegan Cinnamon Roll Mug Cake is the favorite that I keep going back to. And come on people, cinnamon swirl!

Mug cakes are AMAZING because they are quick, simple and effective! They do require a pantry stocked with just the most basic baking ingredients, like flour, sugar, baking powder, etc.

Tips & Substitutions: 

  • You can use brown sugar instead of coconut sugar and obviously any plant based milk will work here. 
  • If you don’t have a bunch of spices, you can add 1 tsp chai spice or 1 tsp of pumpkin spice to the batter.
  • Avoid using tall and skinny mugs, as they make it difficult for the cinnamon roll mug cake to cook evenly in the microwave.
  • The dry mug cake ingredients from just about any recipe will consist of flour, sugar, salt, and baking soda. If you want to mix this up and make a chocolate mug cake, you’ll mix in 1 tbsp cocoa powder at this point, as well.
  • You can use gluten-free flour blend for a gluten-free mug cake.

Vegan Cinnamon Roll Mug Cake - made in the microwave! ⁠

This easy vegan cinnamon roll mug cake recipe with cinnamon swirl and vegan cream cheese icing is made with simple ingredients and comes together in a minute! The perfect treat when you’re craving a cinnamon bun or a little something sweet. Desserts made in the microwave can be so delicious!

Ingredients

Cake

  • 1/4 cup all-purpose flour⁠
  • 1 Tbsp coconut sugar ⁠
  • 1/4 tsp baking powder ⁠
  • 1/8 tsp salt ⁠
  • 1/4 tsp cinnamon⁠
  • 1/8 tsp nutmeg⁠
  • pinch of cloves⁠
  • 1 Tbsp chopped pecans ⁠or walnuts
  • 1/2 Tbsp coconut oil or vegan butter melted⁠
  • 2 tbsp coconut milk
  • 1 tsp ⁠vanilla

CINNAMON BUTTER SWIRL⁠

  • 1/2 Tbsp vegan butter melted or coconut oil ( Earth Balance)⁠
  • 1 tsp coconut sugar ⁠ or brown sugar
  • 1/2 tsp cinnamon⁠
  • big pinch of salt⁠

ICING⁠

  • 1 Tbsp powdered sugar ⁠
  • 1/2 tsp coconut cream

Instructions

  1. In a small mug ( one that hold about 1 cup / 250 ml volume), stir together the dry ingredients. ⁠

  2. Add the melted coconut butter or oil and milk as well as vanilla to the dry ingredients in the mug and stir until a thick batter forms.⁠

  3. In a separate small bowl or mug, melt the coconut oil or vegan butter for the cinnamon butter swirl. Stir the sugar and cinnamon into the melted butter. ⁠
  4. Drizzle the cinnamon butter swirl over the mug cake batter, then gently fold both together until only about half mixed. There should be thick ribbons of the cinnamon butter swirl throughout the batter.⁠

  5. Microwave the mug cake for 45-50 seconds (for an 1100 watt microwave, cooking time will vary with microwave wattage). The mug cake will create quite a bit of steam as it cooks, so don't be alarmed. Let the mug cake cool for 1-2 minutes.⁠
  6. While the mug cake is cooling, stir together the glaze in the same bowl you used for the swirl.⁠
  7. Drizzle the icing over the mug cake and enjoy it while it is still warm.⁠
