There has been a lot of talks lately about how unsafe it is to eat raw cookie dough. Let me tell you, this vegan cookie dough is 100% safe to eat.

Edible Vegan Cookie Dough – a quick healthy post-workout or TV Snack!

I tried out many different versions of this vegan cookie dough recipe! I wanted it to be:

  • refined sugar-free,
  • vegan,
  • gluten-free
  • low-cal
  • but also tasting like the real thing!

So, our cookie base is canned chickpeas! Sounds crazy, but bear with me! This will taste like cookie dough in the end, not like a chickpea dip!

Think of the chickpeas as a plain canvas. This time, it’s not hummus we want, it’s cookie dough. So time for some bold flavors.

In addition to the coconut milk, this edible vegan cookie dough recipe is made with deliciously simple ingredients including Hazelnut Butter (or any kind of nut butter), maple syrup, vanilla essence, and a hint of Ceylon cinnamon.

And chocolate chips. Obvs. Again, we don’t want to confuse our healthy cookie dough with hummus.

The chocolate chip-studded vegan cookie dough is creamy enough to eat with a spoon. But, hey you can roll it into cookie dough balls if that’s your thing!

OR do what I did and serve yourself some serious scoops using an ice cream scoop as I did for the photos.

Scooping the vegan cookie dough out like ice cream and then eating it with a spoon is definitely my favorite way to indulge!

How to make this edible vegan cookie dough recipe:

Making this edible cookie dough recipe will take you, like 5 minutes! It’s that easy and that quick!

The only thing you need your brain for, if for remembering to soak your dates.

Then, simply puree the dates in your food processor and add all other cookie dough ingredients. Blend until smooth. Taste and add more sweetener, cinnamon, or vanilla, if needed.

Stirring the dark chocolate chips into the vegan cookie dough is the most fun part! What started out looking like hummus has turned into a bowl of edible cookie dough! YUM!

Can you eat this healthy cookie dough straight from the mixer? YES, absolutely!

But trust me, if you give it a little chill in the fridge, all the flavors will have some more time to develop and the texture will be less like sweet hummus, and more like real cookie dough!

Tips for making edible vegan cookie dough:

  • The chilling time is crucial as it really enhances the texture of the edible vegan cookie dough since the coconut cream and nut butter have a chance to really firm up and make the cookie dough thicker.
  • I like using coconut cream in this recipe, as it lends a certain creaminess to the vegan cookie dough. Coconut cream comes in cans. Alternatively, you can refrigerate a can of coconut milk and scoop off the solid cream that gathers on top.
  • I have made this vegan cookie dough recipe both in my food processor and my Vitamix and it worked well with both.
  • You can use canned chickpeas, but make sure you rinse them well. Don’t throw out the soaking liquid! You can use it to make incredible Aquafaba Chocolate Mousse or even Aquafaba Meringue Cake.

Variations on this healthy cookie dough recipe:

  • If you want to keep things super light and healthy, use Organic Cacao Nibs instead of chocolate chips.
  • This vegan cookie dough recipe works pretty well with navy beans instead of chickpeas.
  • If you cannot find coconut cream, scoop off the solid part of a chilled can of coconut milk. Another alternative is a mixture of 1 tbsp coconut oil and 1 tbsp of nut milk.
  • Want vegan cookie dough truffles? Chill the dough, roll it into balls, place in the freezer for 20 minutes, and cover with chocolate.

Obviously, this vegan chocolate chip cookie dough is the best-ever TV-Snack. I personally love to eat some as a post-workout snack, while I try to figure out dinner.

Have I given in to the temptation to skip dinner and just eat a bowl of vegan cookie dough? YES, I have. Regrets? NONE!

Edible Vegan Cookie Dough Recipe (Sugar-free)

Ingredients

  • 6 dates pitted and soaked in warm water for 30 minutes
  • 400 g chickpeas rinsed and drained
  • 1 tbsp vanilla extract
  • 1 pinch salt
  • 2 tsp stevia powder or Truvia
  • 1 1/2 tsp cinnamon
  • 2 tbsp coconut cream or coconut milk
  • 1 tbsp nut butter I like sunflower seed or hazelnut butter
  • 1/2 cup dark chocolate chips vegan and sugar-free, if possible

for Peanut Butter Cookie Dough:

  • 20 g peanut butter powder optional
  • 1 tbsp peanut butter instead of nut butter

Instructions

  1. Take dates out of soaking liquid and put into your blender. Blitz into a smooth paste and add all other ingredients apart from the chocolate chips. Blend until smooth. 

  2. Transfer cookie dough into a bowl and stir in the chocolate chips. Chill for about 2 hours covered with cling film and enjoy!

The cookie dough keeps in the fridge for about a week when stored in an airtight container.
