Wer gerne Reisgerichte wie Pilaf oder gebratenen Reis isst, der wird Mujaddara lieben!<\/p>\n<h3><strong>Was ist Mujaddara eigentlich und woher kommt dieses Gericht?&nbsp;<\/strong><\/h3>\n<p>Ein altes arabisches Sprichwort beschreibt die Bedeutung des Gerichtes im Orient wiefolgt:<\/p>\n<blockquote><p>&#8220;Ein hungriger Mann w\u00e4re bereit, seine Seele f\u00fcr ein Mujaddara zu verkaufen&#8221;.<\/p><\/blockquote>\n<p>Auch wenn das wohl leicht an Hyperbel grenzt, ist dieses Linsen-Reis Gericht wohl eine wahre Institution.<\/p>\n<p>Der arabische Linsenreis ist eines dieser klassischen arabischen Rezepte, bei denen man gar nicht mehr genau sagen kann, woher sie eigentlich kommen. Sie scheint es einfach schon immer gegeben zu haben.<\/p>\n<p>Als Mujadarah, Mejadra oder eben Mujaddara bezeichnet, ist dieser Linsen Reis Pilaf ein fester Bestandteil der libanesischen, t\u00fcrkischen, syrischen und jordanischen K\u00fcche.<\/p>\n<p>Das Wort Mujaddara ist arabisch f\u00fcr &#8220;Pockennarben&#8221;, da die dem Reis beigef\u00fcgten Linsen Pockennarben \u00e4hneln. Hm, da l\u00e4uft einem doch das Wasser im Munde zusammen, oder? Bleibt bei mir, bitte!<\/p>\n<p>Das erste aufgezeichnete Rezept erschien schon 1226 im&nbsp;<i>Kitab al-Tabikh, dem sogenannten&nbsp;<\/i>&#8220;Kochbuch der Gerichte&#8221;).<\/p>\n<p>Den arabischen Linsenreis gab es damals f\u00fcr die Reichen an Festtagen mit reichlich Fleisch. Doch glaubt mir, hier geht geschmacklich wirklich die Post ab.<\/p>\n<p>Um dem veganen Linsenreis dieses herrliche arabische Aroma zu verleihen, r\u00f6sten wir jede Menge Gew\u00fcrze an, bevor wir den Reis und die vorgekochten Linsen mit in den Topf geben.<\/p>\n<p>Die zweite Ladung Geschmack kommt von den R\u00f6stzwiebeln, die wir unter den Reis heben. Das Knusrige, S\u00fc\u00dfe, Rauchige der frittierten Zwiebeln ist eigentlich das, was dieses einfache vegane Gericht so besonders macht.<\/p>\n<h3><strong>Tipps f\u00fcr den besten Mujaddara Linsenreis:<\/strong><\/h3>\n<ul>\n<li>In dieses arabische Linsen-Reis-Gericht geh\u00f6rt eindeutig Basmati Reis. F\u00fcr den bestem Geschmack empfehle ich euch eine hochwertige Sorte wie <a href=\"https:\/\/www.amazon.de\/gp\/product\/B00BCXL9PE\/ref=as_li_tl?ie=UTF8&amp;camp=1638&amp;creative=6742&amp;creativeASIN=B00BCXL9PE&amp;linkCode=as2&amp;tag=cinncori-21&amp;linkId=77ae0355eb45462573d2e815905ef723\" target=\"_blank\" rel=\"noopener\">diesen Bio Basmati Reis<\/a><img decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"\/\/ir-de.amazon-adsystem.com\/e\/ir?t=cinncori-21&amp;l=am2&amp;o=3&amp;a=B00BCXL9PE\" alt=\"\" border=\"0\">.<\/li>\n<li>F\u00fcr besonders perfekten Reis, k\u00f6nnt ihr den Basmati Reis nach dem Waschen f\u00fcr 20 Minuten in kaltem Wasser einweichen.<\/li>\n<li>Um ohne K\u00fcchenthermometer herauszufinden, ob das Frittier-Fett oder \u00d6l bereits hei\u00df genug ist, einfach nur den Holzstiel eines Kochl\u00f6ffels in das fl\u00fcssige Fett halten. Ich lasse sie bis zu 20 Minuten braten. In den letzten 10 Minuten hei\u00dft es immer wieder r\u00fchren, damit nichts anbrennt.<\/li>\n<li>Toll schmecken in diesem Linsenreis auch Rosinen oder <a href=\"https:\/\/cinnamonandcoriander.com\/fruechte-selbst-trocknen\/\">getrocknete Kirschen<\/a> sowie ger\u00f6stete Pinienkerne oder Pistazien! Gebt diese einfach mit den Zwiebeln zu dem Mujaddara.
