Der wichtigste Trick: Arbeite mit gut gek\u00fchlten (fast gefrorenen) K\u00fcchlein, damit die Glasur sofort anzieht und sch\u00f6n glatt verl\u00e4uft . Deine Glasur sollte flie\u00dfend, aber nicht zu d\u00fcnn sein \u2013 eher wie warmer Honig, der sich gleichm\u00e4\u00dfig \u00fcber die Seiten zieht . Gie\u00dfe sie gro\u00dfz\u00fcgig von oben \u00fcber die Petit Fours, statt sie zu verstreichen \u2013 so entstehen diese perfekt glatten, eleganten Kanten . Und ganz wichtig: Die Oberfl\u00e4che darunter muss absolut eben sein, denn jede Unebenheit sieht man sp\u00e4ter gnadenlos durch die Glasur .
