Ich war vom ersten Bissen an hingerissen von dem subtilen nussigen Geschmack, den das Brot durch die Zugabe von Kokosmilch bekommt. Das musste ich unbedingt nachbacken!\u00a0Statt der in der Karibik verbreiteten Fladenbrote, \u00a0wollte ich aber ein fluffiges veganes Sandwich Brot mit Kokosnote! Die Kokosnote ist sehr subtil da wir hier nur Kokosmilch und keine Flocken verwenden. Irgendwo zwischen s\u00fc\u00df und herzhaft und zudem weich, buttrig und wunderbar\u00a0s\u00e4ttigend durch\u00a0viele gesunde Haferflocken im Teig! Das leichte Kokosaroma bekommt das vegane Brot durch Zugabe von Kokosmilch. Am Backtag selbst haben wir schon den halben Laib vernichtet. Die Reste habe ich in Scheiben geschnitten und ins Gefrierfach gegeben. Wenn mich dann Morgens oder einfach zwischendurch mal die Lust auf Kokos Brot \u00fcbermannt, kann ich die Scheiben einzeln entnehmen und direkt in den Toaster geben! Beim Formen des Teiges zu der klassischen Sandwichbrot Form sollte man ein paar Dinge beachten. Wenn euer Teig sich nach dem ersten Ruhedurchgang verdoppelt hat, knetet ihr ihn durch und formt ein Oval wie in Bild 1. Dann faltet ihr ein Drittel \u00fcber die Teigmitte und dr\u00fcckt die Naht mit eurem Handr\u00fccken in den Teig (Bild 2 und 3)<\/p>\n<p>Faltet die andere H\u00e4lfte ebenso \u00fcber die Mitte und klappt das Brot zusammen (Bild 4 und 5 ). Dreht den Laib, so dass die Naht nach unten schaut. Gebt den Laib in die ge\u00f6lte Form und dr\u00fcckt es gut in die Form (Bild 8). Lasst es nun nochmal gehen. Der Teig ist sehr klebrig aber widersteht der Versuchung mehr Mehl hinzuzugeben. Nur wenn der Teig absolut nicht zusammenkommt, k\u00f6nnt ihr mit ein bisschen Mehl nachhelfen.
