Er schmeckt unglaublich gut, ist super gesund und einfach ein ganz toller Sommersalat zum Sattessen und Abnehmen.<\/p>\n<p>Mein Salat Rezept macht man mit gebratenem Lachs Filet, gr\u00fcnen Bohnen, Tomaten, hart gekochten Eiern und Oliven. Eine sommerliche Version von Klassisch franz\u00f6sischem Salat nach Nizza Art mit wenig Kohlenhydraten.&nbsp;<\/p>\n<p>Auf dei Idee bin ich durch das Nizza Salat Rezept von Jamie Oliver gekommen. Jamie Oliver richtet seinen Nicoise Salat nach der Nordic Cuisine aus.<\/p>\n<p><strong>Frischer Lachs<\/strong>&nbsp;oder&nbsp;<strong>Lachsforelle<\/strong> ersetzt bei dieser Version als nordische Variante den Thunfisch.<\/p>\n<p><strong>Gr\u00fcne Bohnen<\/strong> sind meiner Ansicht nach ein Muss, ebenso die <strong>Oliven<\/strong>. Und&nbsp;<strong>Eier<\/strong>. Der genaue Ursprung ist nicht bekannt da die ersten verschriftlichten Rezepte auf Paris zur\u00fcckf\u00fchren.&nbsp;<\/p>\n<p>Traditionell wird dieser franz\u00f6sische Salat nach Nizza Art mit Tomaten, Prinzessbohnen, manchmal Kartoffeln, Zwiebeln, hart gekochte Eier, Thunfisch, und schwarze Oliven vermischt! Sardellen kommen oft auch noch zuoberst.&nbsp;<\/p>\n<p>Obwohl ich Sardellen ganz gern mag, gebe ich nur ein paar in das Dressing, nicht auch noch auf den Salat. Die Eier koche ich f\u00fcr 7 Minuten.&nbsp; Damit starte ich immer, dann mache ich den Lachs. W\u00e4hrend der Lachs auf der Hauseite anbr\u00e4t mache ich das Nizza Salat Dressing.<\/p>\n<p>Wer will kann die Bohnen und Eier schon vorbereiten und im K\u00fchlschrank aufbewahren.&nbsp; Das Dressing h\u00e4lt sich 2 Tage.<\/p>\n<h2>Nicoise Salat Dressing<\/h2>\n<p>F\u00fcr das Nizza Salat Dressing habe ich mich an einem Rezept von Alfons Schubeck orientiert! Das Dressing wird mit rohem Eigelb gemacht und ist eine Variante des French Dressings.&nbsp;<\/p>\n<p>Durch das Eigelb erh\u00e4ltst du eine feine Emulsion.<\/p>\n<p>Salat Dressings mit <strong>sehr<\/strong> frischem rohem Ei halten sich im K\u00fchlschrank nur zwei bis drei Tage. Das Anbraten auf der Hautseite sorgt daf\u00fcr, dass der Lachs nicht zu viel Hitze abbekommt und dadurch sanft gegart wird. Somit bleibt m\u00f6glichst viel Eiwei\u00df im Fisch, was ihn butterzart macht.<\/p>\n<p>Die Haut musst du deswegen nicht mitessen. Die kannst du nach dem Braten ganz einfach abziehen oder mitessen.&nbsp;<\/p>\n<h2>Lachs Richtig Braten:&nbsp;<\/h2>\n<div id=\"div_block-739-60\" class=\"ct-div-block\">\n<div id=\"text_block-832-60\" class=\"ct-text-block\">\n<p>Lachs trocken tupfen und von jeder Seite salzen. Lachsfilet direkt <strong>mit der Hautseite nach unten<\/strong>&nbsp;in die hei\u00dfe Pfanne legen. Bei&nbsp;<strong>hoher Hitze&nbsp;<\/strong>ca. 2 Minuten braten, bis sich der Lachs&nbsp;<strong>an den Seiten wei\u00dflich<\/strong> f\u00e4rbt. Auf&nbsp;<strong>mittlere Hitze herunterdrehen<\/strong>, Lachsfilet wenden und auf der Fleischseite 1-2 Minuten weiter braten.&nbsp;<\/p>\n<p>Kurz vor Ende Butter zum Lachs in die Pfanne geben und schmelzen. Lachsfilets bei niedriger Temperatur mehrmals mit fl\u00fcssiger Butter \u00fcbergie\u00dfen.
