Um diesen cremigen Eiscreme Traum in wei\u00df und rosa zuhause herzustellen braucht ihr nur ein paar einfache Zutaten, die ihr wahrscheinlich eh irgendwo auf Lager habt! Und eine Eismaschine.<\/p>\n<\/div>\n<h2>Eigelb &#8211; eine wichtige Zutat f\u00fcr selbstgemachtes cremiges Eis wie aus der Eisdiele<\/h2>\n<div>Das Eigelb dient mit dem darin enthaltenen <em>Lecithin<\/em>&nbsp;als&nbsp;<strong>Bindemittel<\/strong>, welches die Wasser- und Fettmolek\u00fcle im Kokosmlich Eis zusammenh\u00e4lt. Ohne&nbsp; Bindemittel w\u00fcrden sich der Wasser- und Fettanteil gesondert voneinander absetzen, was wir vermeiden wollen. Das Bindemittel Lecithin befindet sich jedoch vor allem im Eigelb, w\u00e4hrend das Eiklar fast nur Wasser ist.&nbsp; Also w\u00fcrden wir den Wasseranteil in der Eisbasis deutlich steigern. Da ein ausgewogenes Verh\u00e4ltnis vom Wasser- und Fettanteil im Eis f\u00fcr die gelungene Konsistenz notwendig ist &#8211; nur die Eigelb.<\/p>\n<h2>Warum muss ich die Kokosmilch f\u00fcr dieses Eisrezept aufkochen?&nbsp;<\/h2>\n<p>Das Erhitzen der Grundmasse soll vorhandene Mikroorganismen durch Pasteurisation abt\u00f6ten und dadurch die Haltbarkeit von unserem Kokosmilch Eis erh\u00f6hen. Ein toller Nebeneffekt ist, dass die trockenen Zutaten wie Zucker und Salz sich in den vorgew\u00e4rmten fl\u00fcssigen Zutaten schon mal aufl\u00f6sen.<\/p>\n<h2>Kann ich das Himbeer Kokos Eis auf laktosefrei machen?<\/h2>\n<p>Ja das geht! Einfach <a href=\"https:\/\/amzn.to\/3uN9i5E\" rel=\"nofollow\">Kokoscreme<\/a> statt Sahne verwenden und mehr Kokosmilch statt Milch.<\/p>\n<h2>Kann ich bei diesem Eis Rezept die Kalorien reduzieren?&nbsp;<\/h2>\n<p>Ja! Vielleicht Fett und Zucker reduziert? Sahne und Kokosmilch braucht ihr hier in der fetten Variante! Das garantiert uns Cremigkeit denn Fett gefriert nicht so hart wie Wasser. Je h\u00f6her also der Anteil von Eigelb, Sahne etc umso cremiger und weicher das Eis.&nbsp;Zucker oder Honig in der richtigen Menge verhindert ebenfalls das das Eis zu hart wird.<\/p>\n<p>Besonders lecker schmeckt das Himbeer Kokos Eis zu meinem <a href=\"https:\/\/cinnamonandcoriander.com\/de\/himbeer-rhabarber-streuselkuchen-mit-anis\/\">Rhabarber Himbeer Kuchen<\/a>.<\/p>\n<p>Welche Eismaschine ist am besten?&nbsp;<\/p>\n<p>Da ich wirklich viel Eis zuhause herstelle habe ich mir diese<a href=\"https:\/\/amzn.to\/3tKVsPW\" rel=\"nofollow\"> Eismaschine mit Kompressor<\/a> gekauft und liebe sie.
