 Today I share with you one of my most cherished German Christmas recipes! Boozy Marzipan Speculoos Truffles!
Like most of my Christmas recipes, this also happens to be a German recipe. Maybe you can tell by the amounts of marzipan and ground speculoos cookies.

These Boozy Marzipan Gingerbread Truffles are the perfect edible present! Trust me, I make this recipe every year and everyone loves it – there are friends of mine who will not see me on Christmas Day without them.
As opposed to chocolate-based truffles, these marzipan truffles hold their shape really well and don’t require cooling! Just put them into a (handcrafted?) box or bag and store them at room temperature until it’s time for presents!
My recipe for these Marzipan Gingerbread Truffles is more than simple! No baking required and no tempering of chocolate. All you have to do is grind some speculoos cookies and knead them into grated marzipan.
As a glue, we use fun ingredients like English orange marmalade, rum, amaretto and gingerbread spice.

What is gingerbread spice and can I make it myself? 

Yes, no one should have to buy that readymade! It’s a simple blend of 1/2 tsp cinnamon, 1/4 tsp cloves and 1/4 tsp nutmeg.
For a more Christmas-y feel, I like to dip my Marzipan Gingerbread Truffles into melted white chocolate to give them that festive look and a slight crunch when you bite into them!
To mix things up a bit, I roll some of my Marzipan Speculoos Gingerbread Truffle in unsweetened coconut flakes right after dipping!

Tips for making the best Marzipan & Speculoos Gingerbread Truffles: 

  • To make grating easier, I find it helps to put the marzipan in the fridge to firm it up a bit.
  • For the Marzipan Speculoos Truffles, you need Speculoos Cookies. Though I have seen them a lot in Canadian Supermarkets lately,  you might just as well order them online. I find these Speculoos Cookies quite delicious. 
  • I like to use orange marmalade and a mix of rum and amaretto to get some bold, festive flavors into out Gingerbread Truffles! Feel free to pick a different light jam, like apricot.

Boozy Marzipan Speculoos Truffles

Ingredients

  • 2 tbsp orange marmalade
  • 200 g Speculoos cookies
  • 200 g marzipan
  • 1 tsp gingerbread spice see above
  • 2 tbsp amaretto liqueur
  • 2 tbsp rum
  • 200 g white chocolate
  • 100 g unsweetened coconut flakes

Instructions

  1. Heat the orange marmalade in a small pot or in the microwave for a couple of seconds. Take off heat and stir well. Grind cookies in a food processor and grate the marzipan.

  2. Knead all the ingredients apart from chocolate and coconut together until a homogeneous dough forms. Let the truffle dough rest while you melt the white chocolate in the microwave or over a baine marie.
  3. Roll the truffles using about 1 tsp at a time, dip the truffles into the white chocolate and roll about half of them in the grated coconut flakes. Let them cool on a wire rack until the chocolate has set.
  4. Store at room temperature in cookie tins.

  2. Hey meine Kuvertüre-Kiki,
    uii lecker Pralinchen, ich will auch noch welche machen! Hab schon seit Wochen Earl-Grey-Pralinen aufm Plan und mir dafür extra total zuckersüße Kaffeezeit-Pralinenformen gekauft, kleine Teekännchen und so <3 Wurde mal wieder durch einen Blog angefixt, ähem.
    Zur Kuvertüre hab ich mal ne Frage an die Expertin 🙂 Wollte meine Kakaoplätzchen mit weißer Kuvertüre verzieren, und da ich ja ähnlich ticke wie du, dacht ich mir, mache ich ein Schüssken Cointreau rein. In die geschmolzene Kuvertüre. Sie ist geronnen und wurde klumpig 🙁 Was meinst du, ist sie verbrannt, weil vielleicht doch das Wasserbad zu viel Grad erreicht hatte (eigentlich hab ich aufgepasst), oder war das ne Reaktion mit dem Alk? Da müsste man direkt mal den guten alten Chemielehrer von früher befragen… Im 2. Anlauf ließ ich den Alk weg und hab nur die Kuvertüre verarbeitet. Das nächste Mal nehm ich aber normale Schoki, die schmeckt besser und wird auch viel dünnflüssiger als Kuvertüre, damit man solche "Fäden" über die Kekse ziehen kann.

    Wie lange sind die Pralinen denn etwa haltbar? Ich wollte sie in einen Adventskalender legen und sie wären erst an Tag 20 dran. Sie müssten also etwa einen Monat bei Zimmertemperatur aushalten. Geht das? Und hast du einen Tipp, wie ich sie am besten verpacke?

    Hallo liebe Kiki 🙂
    Dein Rezept ist wirklich genial. Ich habe bis jetzt nur 1x Pralinen versucht zu machen und die sind eher .. unförmig geworden. Aber deine sind wirklich super lecker und laufen nicht “davon” wenn man sie in der Schokolade “badet”.
    Ich habe allerdings noch eine Anfängerfrage *lach*. Das mit den Kokosraspeln hab ich nicht so hinbekommen. Muss ich die Kugeln direkt nachdem ich sie aus der Schokolade genommen habe in die Kokosraspel geben und dann mit dem Teller schütteln? Ich habe es mit der Pralinengabel gemacht und dann ist irgendwie alles klumpig abgefallen :P. Geschmeckt haben sie trotzdem ;-). Und man lässt sie auf einem Pralinengitter quasi abtropfen damit es unten keine Kante gibt oder? Sorry, ich habe soviele Fragen, entschuldige.
