I there was a cookie award equivalent for the Oscars these Biscoff Oatmeal Cookies would win it! In several categories: Texture, flavour and simplicity of preparation!

Seriously, these Biscoff Oatmeal Cookies are life- and friendship-safers! The secret? Lotus Biscoff Spread aka Cookie butter. The stuff that we all love. Me personally even more so than Peanut Butter!

What do Biscoff Cookies taste like?

These Biscoff Cookies taste like Lotus Cookies thanks to the Lotus spread, which is a delectable blend of cinnamon, brown sugar, and buttery flavors. These cookies taste warm, sweet, and rich. The original Lotus Cookies are thin and crispy and these are crisp on the outside as well but they have a soft and chewy texture on the inside.

You can enjoy them with coffee or tea, as they make for an excellent pairing when dunked into hot beverages.

By the way, these Biscoff Oatmeal Cookies make the best Ice Cream Sandwiches EVER!

The key ingredient here is of course the spread. I´ve seen it at a few grocery stores so just look around at your local stores. If you can’t find it, you can order it online. But I should warn you, it is addicting!

Ingredients

  • 1 1/2 cups old fashioned oats
  • 1/2 cup all-purpose flour plus 2 tablespoons of flour
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 1/2 cup butter at room temperature
  • 1/2 cup Biscoff Spread or Cookie Butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1.  Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat.

  2.  In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt. Set aside.

  3. In the bowl of a stand mixer, add the butter, Biscoff spread, sugar, and brown sugar and beat on medium speed until smooth and creamy. Add the egg and vanilla extra and beat until smooth.

  4.  Reduce the mixer speed to low and slowly add the dry ingredients, beating only until blended. Chill the dough 30 minutes in the refrigerator.

  5.  Form the cookie dough into rounded tablespoons and place them 2 inches apart on the baking sheet. Bake for 8 to 10 minutes or until cookies are golden and just firm around the edges. Let the cookies cool on the baking sheet for 5 minutes and then remove with a spatula onto a cooling rack.
